In My Kitchen, April 2014

April 1, 2014 by Celia @ Fig Jam and Lime Cordial

In my kitchen…

…is ice cream,  made with microwave custard, a handful of grated dark chocolate and crushed amaretti cookies. The mixture was churned in our 25 year old ice cream maker (it was a wedding present!)…

In my kitchen…

…are cayenne chillies from the garden, strung together on a thread. These thin-skinned chillies seem to dry well without going mouldy…

In my kitchen…

…is a gorgeous bunch of flowers, a gift from my friend El…

In my kitchen…

…is a red Le Creuset teapot, a birthday present from darling Terri…

In my kitchen…

…are two new season quinces, brought by Liz when she came over for lunch…

In my kitchen…

…is a chance find at a petrol station in North Ryde – a long, felt backed tile, perfect for use as a trivet (and reduced to $5)…

In my kitchen…

…is organic coconut flour, bought on a whim. Does anyone have suggestions on how to use it, please?  Thanks..

In my kitchen…

…are birthday treats from Lorraine – locally made peanut butter (seasoned with Murray River salt, no less), and a gift from Chile – olive oil and merquén spice mix. I was particularly thrilled to receive the latter…

In my kitchen…

…are the first harvests from our newly planted garden bed – a couple of perennial leeks, a little red amaranth, and some white-stemmed bok choy…

We also have new squash from the garden – after we picked the monster fruit, the plant started producing like crazy!

. . . . .

Love this post. Love the look of that ice cream and them quinces. So beautiful.

    • on April 2, 2014 at 5:34 am Celia @ Fig Jam and Lime Cordial

Thank you! The quinces are our favourite fruit to cook with!

  2. on April 1, 2014 at 12:12 am Jennifer

Oh!!!!! I need to post mine for April! Thanks for the reminder! LOVE your post!

  3. on April 1, 2014 at 12:19 am sallybr

Great round up, as usual, Celia! I am not sure I can get my post ready for April, I might have to wait until May, life is hectic.

But I wanted to tell you that you can use coconut flour as a breading, gluten free type for chicken cutlets, or fish – I’ve seen plenty of recipes around, using just beaten egg whites as a “glue” to the coconut flour. I’ve been meaning to try it, but maybe you can go first? ;-)

    • on April 2, 2014 at 5:35 am Celia @ Fig Jam and Lime Cordial

Sally, no worries love, only when and if you have time and inclination! I thought the coconut flour might work on muesli, but the boys don’t like the taste of it raw.

  4. on April 1, 2014 at 12:20 am thecompletebook

One of my favourite posts of the month. :-D Your ice cream sounds heavenly and your teapot is wonderful. I am in love with Le Creuset’s new white range, although it is frightfully expensive here. Sadly I have no idea what to do with coconut flour. I’m sure you will get great ideas.
Have a lovely day Celia, my IMP post will be up tomorrow morning – not quite April here yet.
    :-) Mandy xo

    • on April 2, 2014 at 5:36 am Celia @ Fig Jam and Lime Cordial

Hooray Mandy, love seeing what’s in your kitchen! Terri tells me there are four matching cups to come – pretty excited about that!

  5. on April 1, 2014 at 12:25 am My Kitchen Witch

I love the quince! I can’t wait for mine, but the tree has only just begun to form leaves and no blossoms yet. I just did a post on coconut flour (short link http://wp.me/p3Uj0i-20K), but, as blogger Cheergerm says, it is the black hole of gluten free flours – very difficult to work with. I got a lot of useful tips in the comments. Oh…happy belated birthday!

    • on April 2, 2014 at 5:37 am Celia @ Fig Jam and Lime Cordial

Ooh thanks Debi, I’ll have a look. I have no idea where to start with it! :)

  6. on April 1, 2014 at 12:30 am Laura

Really love this – and your kitchen looks like a magical place!

    • on April 2, 2014 at 5:37 am Celia @ Fig Jam and Lime Cordial

Laura, my kitchen is actually quite a small place! But I love spending time in it! :)

  7. on April 1, 2014 at 1:44 am dishnthekitchen

beautiful veggies Celia!! and what i wouldn’t give to try that locally made peanut butter. Very cool!

    • on April 2, 2014 at 5:38 am Celia @ Fig Jam and Lime Cordial

Bernie, it’s really very delicious, like smashed up peanuts. I keep thinking it would be brilliant in a satay sauce!

  8. on April 1, 2014 at 1:47 am Jennifer

Your ice cream looks good and the veg are very vibrant. I can’t wait until we can move from root crops and cabbage and start eating summery veg. Looking forward to seeing some interesting things made with that coconut flour – not the sort of thing we find on the shelves over here.

    • on April 2, 2014 at 5:41 am Celia @ Fig Jam and Lime Cordial

Anne, the bag is still sitting on the bench, awaiting inspiration. Maybe on the weekend! :)

  11. on April 1, 2014 at 3:22 am Melissa @ The Glen House

Great post, I must do this!

  12. on April 1, 2014 at 4:53 am Claire @ Claire K Creations

Celia I didn’t know you were a March Birthday too. Happy belated Birthday!
Lots of goodies again. Great idea about stringing the chilis. I have one sitting on the windowsill drying out so I can use the seeds but it’s looking a little sad.
Only tip with coconut flour is it’s very very thirsty! Don’te quote me but I think I remember it needs 5 times the liquid if you’re converting a recipe from regular flour.

    • on April 2, 2014 at 5:44 am Celia @ Fig Jam and Lime Cordial

Thanks love! I’d heard the same about coconut flour as well – things like – use six eggs in place of two!!

  13. on April 1, 2014 at 5:02 am Francesca

I love your new red Le Creuset teapot. The icecream sounds delicious and all the more so because of your microwave recipe for the custard. Lovely birthday gifts.

    • on April 2, 2014 at 5:44 am Celia @ Fig Jam and Lime Cordial

I love my new red Le Creuset teapot too! I’ve used it twice already! :)

  14. on April 1, 2014 at 5:38 am I'm Gonna Cook That

I’m super jealous of that new teapot. What lovely gifts you got! :)

    • on April 2, 2014 at 5:46 am Celia @ Fig Jam and Lime Cordial

      I was very lucky! :)

  15. on April 1, 2014 at 5:53 am The Life of Clare

So much happening in your kitchen Celia! Love the red tea pot! The ice cream sounds delicious!

    • on April 2, 2014 at 5:46 am Celia @ Fig Jam and Lime Cordial

Not nearly as much happening at my place as there is at yours, Clare! :)

  16. on April 1, 2014 at 5:56 am Debra Kolkka

I’ve never heard of coconut flour. I will be interested to see what you do with it.

    • on April 2, 2014 at 5:46 am Celia @ Fig Jam and Lime Cordial

Deb, I’m still trying to figure that out! :)

  17. on April 1, 2014 at 6:13 am Kelly

I adore your monthly updates Celia! There are so many great recipes for use of coconut flour on Quirky Cookings site, but I especially love the brownies!! http://quirkycooking.blogspot.com.au/2012/05/marikes-coconut-flour-brownies.html?m=1
And your ice cream looks devine, i’d eat it for breakfast if I had it in my freezer!! Thanks for your monthly IMK, I look forward to them and seeing what’s going on in so many other kitchens too!

    • on April 2, 2014 at 5:47 am Celia @ Fig Jam and Lime Cordial

Kelly, thanks for the link, I’ll check it out! So glad you’re enjoying the IMK posts! :)

  18. on April 1, 2014 at 6:41 am Pearlycow

Happy belated birthday!! In my kitchen today I am making Anzacs and boiled fruit cake for our neighboring severly drought-stricken shire, in a “Baked Relief” effort. Will have progress photos and other links on my a insta account later on.

    • on April 2, 2014 at 5:48 am Celia @ Fig Jam and Lime Cordial

Thanks Amanda! I’ll check out your feed!

  19. on April 1, 2014 at 7:01 am theintolerantchef

Lovely goodies as usual Celia dear! I bet water stays hot in the teapot for hours, and your trivet is very cute. Great pressies, I’ve never heard of that spice before, and coconut flour works best blended with other flours. It’s very, very, thirsty and a bit tricky, I’ll look forward to seeing what you make with it. Quinces! I adore quinces- the knobliness, the scent, the taste, and the gorgeous deep, ruby red they go when slow cooked. Stunning! Xox

    • on April 2, 2014 at 5:51 am Celia @ Fig Jam and Lime Cordial

Becca, the teapot is heavy duty stonewear, so yes, it does stay warm. I was sure you’d have used the coconut flour before! :)

  20. on April 1, 2014 at 7:05 am Selma's Table

Hello Celia – your veg looks glorious! Looks like you had a good birthday – lots of lovely presents, that’s for sure – Happy Belated Birthday! Love the flavour combination of your ice cream too. Must get cracking with my post…

    • on April 2, 2014 at 5:53 am Celia @ Fig Jam and Lime Cordial

Thanks Selma! Look forward to seeing your post! :)

  21. on April 1, 2014 at 7:20 am dianeskitchentable

Great sounding ice cream & you’ve reminded me that I have an ice cream maker… somewhere. I think those chillies would make a beautiful decoration (you know I’m still afraid of them right?).
Those flowers look so pretty with your teapot. And what a great find on that tile! You got lucky – $5 is great.
I’m afraid I haven’t got much in my kitchen this month…it’s been a very hectic time over here but I love snooping in yours every month. Great job as usual.

    • on April 2, 2014 at 5:55 am Celia @ Fig Jam and Lime Cordial

Diane, sounds like a busy time for you – please don’t worry about posting if you’re flat out! There’s always next month, or the one after that. Hope the surgery goes well – is it soon?

      • on April 2, 2014 at 7:14 am dianeskitchentable

I see the surgeon next Friday & then will have to discuss when he can do it. Believe me if I could have it done that day, I show up in my pj’s! It’s been hard posting because I can’t sit or stand for more than a few minutes at a time. But, I’m making a list of recipes that I can make ahead & freeze for when I get home.
I need to ask the surgeon though about the new hip – I’m thinking of one like Beyoncé … you know her hips move very well.

  22. on April 1, 2014 at 7:49 am Jan Rhoades

Lovely post. I love that your garden has found a second lease on life after harvesting those whoppers. I have a recipe using coconut flour and yoghurt if you would like a copy.

    • on April 2, 2014 at 5:55 am Celia @ Fig Jam and Lime Cordial

Thanks Jan! The trombies are so confused at the moment – weather has suddenly turned cold on them, then hot, then cold! :)

  23. on April 1, 2014 at 8:06 am Ale

As usual, wonderful pics and products!! I don´t know if I´ld have time to post mine…everything is a bit messy over here.
Lots of work, baby grandchild to be look after and kid with a minor health problem… but it implies doctor appointments, etc.
    Great post! Thanks!

    • on April 2, 2014 at 5:56 am Celia @ Fig Jam and Lime Cordial

Ale, no worries at all, whenever you have the time and inclination! :) Hope the minor health problem is very minor indeed! xx

  24. on April 1, 2014 at 8:58 am EllaDee

I’m not big into icecream but that bowl looks extremely seductive. Everything you’ve shared this month is gorgeous, but the fresh flowers are my favourite with their crisp whites and splash of red. We’ve been picking up a bunch up weekly. Despite our weather tending to summery, scarcity of available time, and the need to eat something decent weeknights has pushed me to the tagine and Le Creuset pots to make casserole and roasts but on the lighter side flavoured with a now almost empty bottle of maderia… and no, I haven’t been tippling on it as I cook.

    • on April 2, 2014 at 5:57 am Celia @ Fig Jam and Lime Cordial

You didn’t drink any of the madeira as you were cooking? How did you resist? :) I think the weather’s about to turn cool, or at least I hope so. Autumn hasn’t really felt very autumnal yet! :)

  25. on April 1, 2014 at 9:12 am cravesadventure

Loving the branding on that jar of PB:) I am enjoying the rice cooker I received during the Holidays – may branch out and try making more than rice in it – rice porridge, rice pudding, etc. Happy Week!

    • on April 2, 2014 at 5:58 am Celia @ Fig Jam and Lime Cordial

Renee, that sounds like fun – we haven’t used a rice cooker in years, but we still have on in the cupboard! :)

  26. on April 1, 2014 at 9:23 am pallyme54

I’m inspired again, Celia! Your icecream looks divine, and I love your chilli string! And, quinces … yum!

My post for April is here

    Thanks once again!

Hooray! Thanks Marian, it’s on the list! :)

  27. on April 1, 2014 at 9:26 am Jody

Yet another lovely post Celia. There’s always something interesting happening in your kitchen:)

Jody, thank you for the lovely card. And Bonnie is a perfect starter name! :)

  28. on April 1, 2014 at 9:28 am Liz Posmyk of Bizzy Lizzy's Good Things

Hi love, so wish I had brought you a boxful of quinces! We are about to have some of Pete’s quince jelly today! I’m making some fresh ricotta to go with it. Gorgeous things in your kitchen… that tile is so pretty, and what a bargain! Wish you lived closer!

    • on April 2, 2014 at 5:59 am Celia @ Fig Jam and Lime Cordial

Hahaha…I wish you had too, darling! But you did let us know they were back in season, and we’re incredibly grateful for that! Time to make more quince jelly!

      • on April 2, 2014 at 1:01 pm Liz Posmyk of Bizzy Lizzy's Good Things

So, are you going to let me organise a box of them for you then? I’d love to do so, just to say thank you for everything! xox

  29. on April 1, 2014 at 9:34 am ladyredspecs

Delicious sounding ice cream, crunchy amaretti make everything taste good. I’ve gone quince crazy too. My contribution to this month’s IMK has posted http://wp.me/p2frs2-1qs
Thanks for hosting this fun forum

      Thanks for playing, Lady Redspecs!

  30. on April 1, 2014 at 9:39 am Eha

‘Jealous’ of the merquen spice mix – have to look that one up: one used to make merguez sausages??

    • on April 2, 2014 at 6:00 am Celia @ Fig Jam and Lime Cordial

I don’t think so Eha, I think it’s a Chilean blend with aji chillies. I’ve been throwing it into all sorts of things! :)

G’day and WOW!! Really enjoyed your post today Celia and LOVE your microwave custard and cake….is on the list to do! I didn’t know Le Creuset made teapots and flowers always brighten my day too!
I bought coconut flour on a whim this week before seeing your post….Banana Bread, Peanut Butter and Jelly Stuffed Muffins, Double Chocolate Almond Espresso Muffins and Dark Chocolate Raspberry Chia Banana Bread are a few suggestions…
Thanks for hosting such a great series! Cheers! Joanne

    • on April 2, 2014 at 6:01 am Celia @ Fig Jam and Lime Cordial

Joanne, thank you – the LC teapot is stoneware, and it’s really heavy and very gorgeous. I love it!

  34. on April 1, 2014 at 11:17 am milkteaxx

LOVE LOVE LOVE that red Le Creuset teapot!

    • on April 2, 2014 at 6:01 am Celia @ Fig Jam and Lime Cordial

      Me too! :D

  35. on April 1, 2014 at 11:48 am ardysez

Ditto on loving the red Le Creuset teapot! Altogether a very inspiring collection of things going on in your kitchen. I often use the coconut flour to dust a cake tin after buttering it. Gives the slightest hint of coconut flavour but not enough to intrude on the cake’s flavours. Just saw another recipe recently and thought I must try that, but have forgotten where it was… will let you know.

    • on April 2, 2014 at 6:02 am Celia @ Fig Jam and Lime Cordial

Ardys, that’s a good suggestion – being GF, do you ever use it as the main flour in a cake? Kelly above left a link to a coconut flour brownie recipe which you might like?

  36. on April 1, 2014 at 11:51 am Jan Rhoades

Hi Celia – Jan Rhoades here again. I have found the recipe so if you let me know your email address, I will send it through to you.

    • on April 1, 2014 at 11:53 am Celia @ Fig Jam and Lime Cordial

Hi Jan, I’ve just emailed you. Thanks! :)

  37. on April 1, 2014 at 1:26 pm spiceandmore

Interested to see what you do with your coconut flour. I bought some ages ago (same brand too!) and wanted to love it…but I didn’t. I found it left a dry, gritty taste in the mouth, and surprisingly not a very strong coconut flavour. I wondered if it had been made with the left over dry bits they get after squeezing out all the coconut milk. My suggestion would be to use a little along with other gf or normal flour or expect a pretty gritty textured result.

    Love the red teapot!

    • on April 2, 2014 at 6:03 am Celia @ Fig Jam and Lime Cordial

SG, apparently it IS made from leftover pulp after the milk is squeezed out – will be interesting to see if there’s much flavour left behind!

Ha! It’s not for everyone! :)

  41. on April 1, 2014 at 6:36 pm Lorraine @ Not Quite Nigella

I loved how excited you were by the merquen! I must admit that I hadn’t heard of it before visiting Chile and it’s a spice native to Chile and Andean regions so it’s not often seen here. I have a great coconut flour recipe that I’ll send you!

    • on April 2, 2014 at 6:04 am Celia @ Fig Jam and Lime Cordial

Cool! Look forward to seeing it, thanks love! x

  42. on April 1, 2014 at 6:53 pm Stefanie

I think it’s great you have a ice cream maker from 25 years ago. I bet the new ones these days wouldn’t last that long, sadly that seems to be the case with lots of electrical items. That bok choy looks amazingly fresh, your garden is just wonderful.

    • on April 2, 2014 at 6:04 am Celia @ Fig Jam and Lime Cordial

Stefanie, there just isn’t that much to break down in the machine – we freeze a disk and fill it with liquid, so there’s never much pressure on the motor to work too hard! :) And thank you for noticing – the bok choy makes me ridiculously happy.. :)

  43. on April 1, 2014 at 7:42 pm hotlyspiced

I can’t believe you got an ice cream machine for your wedding and 25 years later it’s still going strong. I don’t think we got any thing much for our wedding other than placemats! How lovely to have those gifts from Chile – my husband was born there and I’ve heard many stories of the produce! xx

Charlie, have you made him empanadas yet? And I’m impressed you still have placemats – you’ve been married a lot longer than we have! :)

I’m particularly loving what you are getting from your garden. So fresh!

I might try using some tiles as trivets. I often see them and don’t buy them, even though they are gorgeous, because I don’t have a use for them. We can get those little rubber sticky pads for the back!

    • on April 2, 2014 at 6:06 am Celia @ Fig Jam and Lime Cordial

Pat, as I mentioned to you on twitter, I’m completely taken with the tile trivets! They work so well!

That coconut flour is a great one to use. Try Jude Blereau or My Darling Lemon Thyme for some great recipes to use it in. Enjoy!!

Norma, thank you! The trivet has been great for teapots – I think it was meant to hang on the wall as a picture (who hangs a heavy tile like that on the wall?). You might like our earlier post on trivets as well:

Brydie, if you ever get to the Pepe Saya factory, they sell it in the same place. Not sure where in Aus the peanuts come from, but they might fall within your local eating rules?

Belated Happy Birthday Celia, really enjoyed your IMK round up this month, so many lovely items, mmmm to the icecream! Sounds like North Ryde has a posh petrol station if they are selling such pretty tiles, what a great find ;-)
    Have a great April!

    • on April 2, 2014 at 8:16 pm Celia @ Fig Jam and Lime Cordial

Thanks Danielle – the North Ryde petrol station, there’s a story behind that too. Our friend Moo had arranged to be picked up there by a friend, so we had to drive him there – and it’s a tiny little station too. Funniest thing – we pull up at the servo, and he gets out with all his luggage. Then I bought some tiles. :)

I love the sound of your ice cream and your home made chilli string. I hope you have fun with coconut flour too! It took me a while to get used to it but I find it works well in no-bake goods and if used in a small proportion with other flours in baked goods. My favourite use for it is in no bake, really easy brownie squares (http://www.bitesizedthoughts.com/2012/10/vegan-brownie-bites-with-avocado-and.html) :)

I have also just published my IMK post for April! – http://www.bitesizedthoughts.com/2014/04/in-my-kitchen-april-2014.html

  70. on April 3, 2014 at 12:42 pm Tania @ The Cook's Pyjamas

I covet that tea pot. It is beautiful. I am also seething with jealousy that you are already getting produce from your garden. :) It has just become cool enough here to finally think about planting.
The trick to working with coconut flour is to not substitute it entirely for other flours. It is so high in fibre and protein that any more than approx 10-30% will make your end result extremely dense. You may also need to adjust up your liquid component. I’ve had some success with it using this approach. Lots of great links above too.

  71. on April 3, 2014 at 3:53 pm Johanna GGG

What a lovely kitchen of presents and autumn. I’d be interested to hear what you will do with your quinces. I have coconut flour and hardly use it – it seems to only ever be used in small amounts in recipes. You have reminded me of a coconut bread I meant to us (it often seems to be part of paleo recipes and fudgy brownies) – http://www.nourishingdays.com/2009/02/coconut-flour-bread/ – will look forward to hear how you go with coconut flour. And I wish kitchen hardware these days lasted as long as your ice cream maker

I have also posted my IMK post http://gggiraffe.blogspot.com.au/2014/04/in-my-kitchen-april-2014.html

ahhh it’s quince season!! Thanks for posting that Celia, I wouldn’t have known and I absolutely adore quince. My local farmers markets and shops haven’t had any for sale yet so I might have to make a trip out to Flemington Markets I think!
I’m absolutely drooling over your icecream, it looks absolutely amazing! Great IMK post!

  73. on April 4, 2014 at 2:24 pm Three Well Beings

My mind is now stuck on that ice cream! And I love that you make it in an older ice cream maker. Nothing compares, in my mind. Can you tell I enjoy ice cream?

Hello Celia. Firstly, thank you for adding me to your list so efficiently! Much appreciated.

Your kitchen is interesting and vibrant as always. That icecream looks so good…how good is that icecream machine to still be going strong after 25 years. I adore that teapot, I have not seen Le Creuset teapots before. Is there anything more delicious than quinces at this time of the year, I love them!

Your bok choy and squash look so healthy and ready for eating. Wishing you a lovely weekend x

Celia, your fresh produce is making me anxious for gardening season (just started here — realize you’re at the tail end there) and your Le Creuset tea pot and ocean-y trivet are colorful, beautiful additions to your kitchen. Haven’t tried coconut flour yet… looking forward to seeing how you use it. Thanks for bringing variety (the spice of life!) into my kitchen by sharing yours. xo

A Le Creuset tea pot. Very classy! Good to see your veggies going well and no doubt happy after that big dose of rain. Our poor back garden couldn’t deal with the heat and lack of rain, despite all my watering but I’ll replant at Easter. I didn’t realise that servos dealt in homewares! Thanks for hosting Celia.
