Great round up, as usual, Celia! I am not sure I can get my post ready for April, I might have to wait until May, life is hectic.
But I wanted to tell you that you can use coconut flour as a breading, gluten free type for chicken cutlets, or fish – I’ve seen plenty of recipes around, using just beaten egg whites as a “glue” to the coconut flour. I’ve been meaning to try it, but maybe you can go first? ;-)
Sally, no worries love, only when and if you have time and inclination! I thought the coconut flour might work on muesli, but the boys don’t like the taste of it raw.
One of my favourite posts of the month. :-D Your ice cream sounds heavenly and your teapot is wonderful. I am in love with Le Creuset’s new white range, although it is frightfully expensive here. Sadly I have no idea what to do with coconut flour. I’m sure you will get great ideas.

I love the quince! I can’t wait for mine, but the tree has only just begun to form leaves and no blossoms yet. I just did a post on coconut flour (short link http://wp.me/p3Uj0i-20K), but, as blogger Cheergerm says, it is the black hole of gluten free flours – very difficult to work with. I got a lot of useful tips in the comments. Oh…happy belated birthday!

Lots of goodies again. Great idea about stringing the chilis. I have one sitting on the windowsill drying out so I can use the seeds but it’s looking a little sad.
Only tip with coconut flour is it’s very very thirsty! Don’te quote me but I think I remember it needs 5 times the liquid if you’re converting a recipe from regular flour.

I see the surgeon next Friday & then will have to discuss when he can do it. Believe me if I could have it done that day, I show up in my pj’s! It’s been hard posting because I can’t sit or stand for more than a few minutes at a time. But, I’m making a list of recipes that I can make ahead & freeze for when I get home.
I need to ask the surgeon though about the new hip – I’m thinking of one like Beyoncé … you know her hips move very well.

I’m not big into icecream but that bowl looks extremely seductive. Everything you’ve shared this month is gorgeous, but the fresh flowers are my favourite with their crisp whites and splash of red. We’ve been picking up a bunch up weekly. Despite our weather tending to summery, scarcity of available time, and the need to eat something decent weeknights has pushed me to the tagine and Le Creuset pots to make casserole and roasts but on the lighter side flavoured with a now almost empty bottle of maderia… and no, I haven’t been tippling on it as I cook.
You didn’t drink any of the madeira as you were cooking? How did you resist? :) I think the weather’s about to turn cool, or at least I hope so. Autumn hasn’t really felt very autumnal yet! :)
Loving the branding on that jar of PB:) I am enjoying the rice cooker I received during the Holidays – may branch out and try making more than rice in it – rice porridge, rice pudding, etc. Happy Week!

Ditto on loving the red Le Creuset teapot! Altogether a very inspiring collection of things going on in your kitchen. I often use the coconut flour to dust a cake tin after buttering it. Gives the slightest hint of coconut flavour but not enough to intrude on the cake’s flavours. Just saw another recipe recently and thought I must try that, but have forgotten where it was… will let you know.

Interested to see what you do with your coconut flour. I bought some ages ago (same brand too!) and wanted to love it…but I didn’t. I found it left a dry, gritty taste in the mouth, and surprisingly not a very strong coconut flavour. I wondered if it had been made with the left over dry bits they get after squeezing out all the coconut milk. My suggestion would be to use a little along with other gf or normal flour or expect a pretty gritty textured result.

I think it’s great you have a ice cream maker from 25 years ago. I bet the new ones these days wouldn’t last that long, sadly that seems to be the case with lots of electrical items. That bok choy looks amazingly fresh, your garden is just wonderful.
Stefanie, there just isn’t that much to break down in the machine – we freeze a disk and fill it with liquid, so there’s never much pressure on the motor to work too hard! :) And thank you for noticing – the bok choy makes me ridiculously happy.. :)
I can’t believe you got an ice cream machine for your wedding and 25 years later it’s still going strong. I don’t think we got any thing much for our wedding other than placemats! How lovely to have those gifts from Chile – my husband was born there and I’ve heard many stories of the produce! xx

I might try using some tiles as trivets. I often see them and don’t buy them, even though they are gorgeous, because I don’t have a use for them. We can get those little rubber sticky pads for the back!

That coconut flour is a great one to use. Try Jude Blereau or My Darling Lemon Thyme for some great recipes to use it in. Enjoy!!

Thanks Danielle – the North Ryde petrol station, there’s a story behind that too. Our friend Moo had arranged to be picked up there by a friend, so we had to drive him there – and it’s a tiny little station too. Funniest thing – we pull up at the servo, and he gets out with all his luggage. Then I bought some tiles. :)

I love the sound of your ice cream and your home made chilli string. I hope you have fun with coconut flour too! It took me a while to get used to it but I find it works well in no-bake goods and if used in a small proportion with other flours in baked goods. My favourite use for it is in no bake, really easy brownie squares (http://www.bitesizedthoughts.com/2012/10/vegan-brownie-bites-with-avocado-and.html) :)

I covet that tea pot. It is beautiful. I am also seething with jealousy that you are already getting produce from your garden. :) It has just become cool enough here to finally think about planting.
The trick to working with coconut flour is to not substitute it entirely for other flours. It is so high in fibre and protein that any more than approx 10-30% will make your end result extremely dense. You may also need to adjust up your liquid component. I’ve had some success with it using this approach. Lots of great links above too.
What a lovely kitchen of presents and autumn. I’d be interested to hear what you will do with your quinces. I have coconut flour and hardly use it – it seems to only ever be used in small amounts in recipes. You have reminded me of a coconut bread I meant to us (it often seems to be part of paleo recipes and fudgy brownies) – http://www.nourishingdays.com/2009/02/coconut-flour-bread/ – will look forward to hear how you go with coconut flour. And I wish kitchen hardware these days lasted as long as your ice cream maker

ahhh it’s quince season!! Thanks for posting that Celia, I wouldn’t have known and I absolutely adore quince. My local farmers markets and shops haven’t had any for sale yet so I might have to make a trip out to Flemington Markets I think!

Your kitchen is interesting and vibrant as always. That icecream looks so good…how good is that icecream machine to still be going strong after 25 years. I adore that teapot, I have not seen Le Creuset teapots before. Is there anything more delicious than quinces at this time of the year, I love them!

A Le Creuset tea pot. Very classy! Good to see your veggies going well and no doubt happy after that big dose of rain. That teapot, love! Happy belated birthday :D I have a few recipes using coconut flour over on the blog (a cobbler and brownies), main trick is that the flour absorbs a ton of liquid so you need very little and have to use something else to bulk out the recipe and bind it together!
