A couple of things…
Firstly, a reminder that the 4th International Scone Week begins on the 11th August! Here’s our post from 2013 – hopefully we can have as much fun this year!

In my kitchen…
…are brownies for my young friend Red Roars, who is in the middle of exams. I used this recipe…
In my kitchen…
…is a new attempt at pulled pork. I skinned cheap pork hocks, seasoned them with a brown sugar spice rub, then baked them in presoaked Römertopfs for four hours at 135C. Unlike my usual recipe, I didn’t add any water, but I did turn the meat over and basted it in its juices a couple of times during the cooking process. The result wasn’t quite as tender as the other method (which could have been because of the cut I used), but the meat was incredibly flavoursome…

…is an automatic egg cooker, picked up from Aldi for under $20. My friend Carol swears by hers, and I’m hoping it will help us deal with our current egg glut…
And speaking of Carol, in my kitchen…
…is the last bar of nougat that she brought us back from Spain. The other two were absolutely delicious…

…is a one kilo box of Buderim Naked Ginger, which we found at Costco. We eat a lot of ginger at our house…
The naked ginger is still candied, but without the heavy sugary coating. I’m not sure how it can be low GI, as it’s still very sweet…

…is fancy Italian pasta, picked up for $1 a packet on sale at our local Italian supermarket…

…are bags of Antico Molino Caputo Semola di Grano Duro Rimacinata. Along with regular bakers flour, this fine remilled semolina flour forms the backbone of most of my sourdough baking. The Caputo brand is of a particularly high quality…

Happy August to you too Celia. If only all exams desks had been made of chocolate brownies – I suspect I might have studied with more enthusiasm! That brand of semola rimacinata is now available in Brisbane. I had to walk my feet off to find the flour when I initially wanted to make your ciabatta but now I see it popping up in a few places and my initial thoughts were that it must have been triggered by more readers of FJLC looking for it. I’m so glad you’re going to do a post on confit cooking. I’ve always wanted to give it a go but find it a little intimidating. I’m intrigued by the automatic egg cooker – I must tell ‘my girls’ about that. We have them corralled now so that they can’t rake and chomp all over the garden and they are a bit put out – one did go ‘over the wall’ briefly – she landed on the top of the chicken wire which wobbled backwards and forwards and the look of consternation on her face was very funny. Thanks for a nice post Celia.
Jan, the confit post is coming up next, and it’s written just for you. Ha! That sounds so PR-ish, but honestly, I wrote it because I always used to think confit was intimidating, and then one day I figured out it just wasn’t. :) I’m glad you have the chooks away from your garden beds now!
All looking good Celia as usual Celia. How wonderful to grow your own limes – did you do something special with them? I candied some ginger without coating it in sugar and sometimes slip a couple of pieces in with some dried fruit for Bill’s packed lunch – just to keep him on his toes. Intrigued by the egg cooker.
Anne, they’re sitting on the kitchen bench and we’re just admiring them at the moment. The tree has taken a few years to fruit, so we’re feeling really chuffed at the moment. I’m hoping the little egg cooker will be the business – it certainly promises a lot in the blurb!
Happy August! I am always amazed at how punctual you are with your IMK posts. The brownies look delicious. I am using some limes lately. I wish I could grow them here! I have been debating for a while if I should get an egg cooker.
In my kitchen right now is a yeast pumpkin bread loaf and pumpkin chip cupcakes. Also the preparations for making a big batch of tomato soup which will be canned
Manuela, I’ll give the egg cooker a whirl and let you know how I go. It was a cheap punt from Aldi, or I wouldn’t have bought it, but it does promise to cook 7 eggs at a time!

I’m fascinated by your egg cooker. Will you make deviled eggs? (my fav) It’s hot here so I’m not spending as much time in the kitchen as usual. Need to plan some meals for the BBQ. Hugs and good eats, Maz.
Maz, I don’t think so – boiled and poached as far as I can tell. My most recent fascination has been with US bbq – which is funny given that I don’t even own a bbq! :)
We have a small gas grill which is great for keeping the heat outside but we do our BBQ ribs in foil in the oven ala Alton Brown. :-)
Another fun month in your kitchen! It all looks so wonderful. I am jealous of the limes. We had a drawn lime tree years ago and it died after a couple years.
We’re lucky that it’s fruited – the kaffir lime and finger limes aren’t looking particularly good at the moment, but this little Tahitian is doing well!
Maybe we will try limes again sometime! I finally managed to get up my own In My Kitchen post! I have been meaning to do it for months and never seem to get it done!
Ooh lots of exciting things – love the Spanish one pot dish and thanks for the salt photo! Isn’t it pretty?! My parents are at their home in London right now so I am going to ask my mum to try and track some down for me – I don’t think it will be a problem there. Will have to give some thought to making scones soon too :)

Francesca, can I offer you a recipe? If you have access to the semola rimacinata (it’s quite different from fine semolina, in that it’s actually a finely remilled flour), you might like to give our sourdough ciabattas a whirl.. :)

It’s just ridiculous, when will I ever get a decent sleep! But Mr T swears he hears me snoring at times so I must get some. My head is often too busy for sleep although put on the TV and I manage a good catnap. Age or madness?

I’ve a similar egg cooker Celia, and it’s great for steam ‘boiling’ them. I don’t like the texture of the ‘poached’, they go quite rubbery though. Hope you gets lots of use from yours :) Your pork looks yummy and your brownies are awesome! I still have no normal limes or lemons cropping,I must need to feed mine more. Lots of lovelies as usual lovely! Xox

Another lovely collection, Celia. I bought 2 “patio” limes last year, which are a dwarf variety. As soon as I got them home they started dropping leaves, so I repotted them – only to find they were utterly pot-bound. They’ve been struggling ever since. I despair of ever getting fruit off them.
Amanda, we’ve never had luck with citrus in a pot – in fact, we have very little luck with anything other than succulents in pots. I think it’s the daily watering – we never seem to get around to it! I wasn’t sure about the dwarf limes, but I’m much happier now one of them has actually fruited! Hope you’re enjoying Vietnam – love the photos!

I love the look of your confit duck and can’t wait to see the end result. I often see fancy pasta for $1.00 but we have to buy spelt as so many in this house are trying to cut back on gluten (somehow the gluten in spelt is okay). I would love to try that nougat! I love crystalised ginger but hate the amount of sugar so need to buy some Buderim ginger. How fortunate to have an egg glut! I buy so many cases of eggs and every time I reach for yet another carton, I keep thinking I need my own hens xx
Charlie, you’d love the Buderim naked ginger – it really is perfect without the sugary coating. You can get it anywhere now in small bags. I wish you had chooks too – I can only imagine how much you’d love them – if the girls didn’t eat them! :)
Oh how I love the first of the month! It took me until the 24th of last month to get through all of the IMK posts. I’ve just planted my first lime tree so I’m envious of yours and also of the egg glut. The dog forced his way into the pen yesterday and ate what few eggs there were.

Our lime tree looked like it was starting well, but only ended up with a few fruit. My only knowledge of confit is hearing the term used on Masterchef, I look forward to your post on it.
Danielle, I wish I understood how citrus worked! Of the three limes we planted – the Tahitian has just made its first fruit, but the kaffir lime is looking poorly, and the finger lime is nothing but a mass of thorns. It might not survive our garden given that it lives next to the driveway!

A great look into where the magic happens, Celia.Love that you’ve always got some sort of baked goods on display, like today’s brownies. Yum! They’ll make up for the lack of tromboncino. :)
I buy Caputo flours, too. Coincidentally, my Italian market is also called Caputo’s. They’re different companies and I’ve no idea whether they’re in any way related. No matter. I like and use both.
John, the trombies will be back in one form or another, we’ll just have to find a different bed for them. We’re still eating the monster mutants from last year – my creativity with them is quite stretched. :) The Caputo flours are really nice – they have a great pizza flour as well. We usually use the Granoro flours, but the last batch we bought was buggy, so I’ve made the switch.
I always feel like I have just been travelling the world whenever I come and read one of your posts Celia :). You are a most accomplished and adventurous cook and I love getting ideas for my own kitchen from yours. I also love that you use frugal as well as expensive cuts of meat for your meals and as Stevie-boy eats meat, it gives me some great ideas for his meals as well. Cheers for your ongoing hard work and coordination of this event, it really is appreciated :)
Fran, you say the nicest things, thank you. :) We love meat, but we try to buy higher welfare meat, which is never cheap, so we balance that out by trying to stretch it as far as possible, and to use as many bits and pieces that might otherwise be rejected. That does mean we end up with occasional offerings of trotters and pigs’ ears – haven’t been able to bring myself to cook intestines yet! :)
So long as the “bits” inside the intestines are missing and they have been washed out they are amazing for sausages and home-made haggis (I had a Scottish grandfather). I was raised on thrift but only learned that it WAS thrift when I left home and realised that what we had been eating came from cheaper cuts. Grandma and mum were both amazing cooks and what they cooked and how they prepared it has stayed with me and followed me into my vegan exploits only it’s VERY hard to replicate brawn and pigs trotters if you are vegan ;)
Confit duck is Rich’s favourite to order when we eat out so I’m looking forward to seeing what you do with it. Although with his high cholesterol I should be helping him to steer clear! Love the peek in your kitchen. What dishes do you use the smoked salt for? Congrats on your limes :) Have you heard of a lemonade fruit? My sister gave me some recently which she picked up at her local greengrocer, the juice is delicious in mineral water, tastes like lemonade but milder less sickly sweet.
Stefanie, I often add the smoked salt to my Romertopf porks – we don’t have a bbq, so it’s a little bit of added flavour. And lemonade fruit – I have seen it, but have never tried it. Sounds delicious!

Oh I love naked ginger. I really should switch back to it instead of the regular crystallised ginger. I actually consider crystallised ginger to be my ‘lollies’, and it’s good because I can only eat so much of it before my mouth tells me to stop, but with some lollies I can eat a whole bag. I’m also quite intrigued by the smoked salt. It’s not something I’ve come across before, but I can imagine it adds some interesting flavours.

Glenda, we eat the naked ginger as “lollies” too – it’s our after dinner treat. I used to dip them in chocolate, but then I eat far, far too many of them. The smoked salt is lovely – quite a few brands of it available now!

The brownies and smoked salt are calling to me, and making me wonder what smoked salt brownies would be like…I like salted chocolate and smoky things so it seems like it out to be a good pairing!

Hi, Celia! Your pulled pork would do an Oklahoma barbecue proud! The brown sugar spice rub sounds fantastic and those fresh limes are begging to be squeezed over a taco or fajita… with a brownie for dessert, of course. ;) (Nice of you to make them for your young friend!) Another wonderland of delicious goodies. The smoked salt looks very nice, big crystals too. Didn’t know you used the Caputo semolina. They really know how to make flour. Sounds like your girls are happy if they are laying a lot of eggs.
T, I used to use the Granoro remilled sem because it was always on special, but the last batch I had was really buggy. Johnny ordered a ten pack of the Caputo for me, and it’s superb!
My word! Those brownies and the smokes salt make me want to get baking and go smoked salt hunting respectively! What a lovely month in your kitchen Celia. Congratulations on harvesting your own limes too!

Lots of good stuff – I am most excited that you are getting limes off your tree (ours had a good yield a few months back but now it is the lemon tree that is doing well) and the smoked salt – and intrigued by the semolina flour – I use it in pizza dough quite a bit but haven’t used it in sourdough baking.

Johanna, I used the remilled semolina in most of my loaves – I love the chewiness and elasticity it imparts on the crumb!
Wow Celia, I woo love to be in your kitchen this month, with all of those delicious treats!! How wonderful are limes this year. It has been such a spectacular winter for citrus, it’s the first time my father in law had limes on his Tahitian lime tree (and not just the blossoms) in about 20 years!! Your limes look just right to be squeezed over some frangelico on ice!!
Frangelico! I’m giving that a miss for a couple of months – don’t ask.. ;-) And yes, the citrus has been amazing this year, hasn’t it!

Celia – I was just thinking about scone week & how I haven’t made any in a very long time. I wonder if those brownies were only for your friend in the middle of exams – no help from your family? A brown sugar rub sounds delicious on the pork & is something I haven’t thought to try although it definitely seems to be a winner.
Love that egg cooker! I take it the chooks have been productive? The cooker looks like it does more than just hard boil the eggs (based on the picture). I’ll be interested in hearing how that works out.
Wow – smoked salt…I can’t wait to hear what you do with that since you’re always so creative I’ll bet you’ve got plans. All that food is making me very hungry – wish I had all of it for lunch right now.

Tania, I’ve figured out that pulled pork is a very economical way for us to eat meat – it ends up in several dinners because it’s so versatile! :)
Pulled pork is on my list of things to do…perhaps a new enthusiasm! And the ginger looks wonderful :) I think I woulud eat like candy. My IMK post will be going up in just a few minutes.

Well it seems I’ve commented on everyone’s post except yours… I am committed to getting a Romertopff after all of your posts but the thing that really took my fancy this month is the fact that you used cheap pork hocks to make that delicious looking pulled pork. Great idea. I have a microwave egg boiler. It’s all I use. 4 eggs in 10 minutes, no fuss, no cracks, all good. Easy to mak a batch to have for lunches. Cheers. xx

Happy August Celia and love that you have fresh limes in your kitchen. My limes tree only flowered this year after five yersrs of waiting. So my one lime is going to be very precious. And you also have so much warmth and generosity in your kitchen – those brownies look like just the thing to get anyone through exams, the smoked salt looks delicious, love the sound of nougat as a souvenir and I am intrigued by your use of semolina in your sourdough baking.
