…is another batch of Pete’s magic praline, this time studded with roasted blanched hazelnuts. It’s very dark but not bitter. Pete now makes his caramel in the copper pot using just sugar (without adding any water)…

In my kitchen this week…a whole chicken cooked on top of potatoes and carrots in a slow cooker; chicken goulash made with the leftovers from said chicken, and on the docket for today, homemade bread.

Oooh that curry looks good! Love the knifes, they are like tiny gorgeous useable sculptures :) Your poor garden after the storm, at least you have that amazing bottle of bubbles to console yourself with ;) I too never add water to my sugar for caramel (my mum told me it was more of a danger with than without when I was young so that’s how I’ve always done it!). Clare, we did save a trombie, and we have snake beans and some broccoli raab in the freezer too! To be honest, I was wondering how we were ever going to get rid of the trombies.. :)

Is it really May already, Celia?! That was one hell of a hailstorm! I have some friends whose warehouse roof has half a metre of hail and all their goods are in danger of being ruined. Sorry about the garden! Massel stocks are always in my larder.. I really do like them. Have a wonderful weekend xo

I thought of your garden during the hailstorm. I hope all the chookies stayed safe. I’ve seen Massel stocks in the store but figured they were probably too veggo for me. I’m glad to know I was wrong. The bee on the knife makes my day.

And secondly: on principle I do try to make my own stock and hence oft have none in the freezer :) ! I’m a fan of the Massel stock powders as well for adding a subtle flavour boost. Usually I buy the “chicken” but next time I’ll try the vegetable.
Ah, Laguiole… I’ve been hankering after a cutlery set but just cannot justify the extravagance seeing as we are adequately set up in that area but you never know!
We were away during that hailstorm but a friend posted some pictures on FB of our street flooded with hail and water right near where my car is parked in an underground car park… all was well though. I’m sorry to hear of the damage to your garden.
ED, El picked up a few sets at auction for a very reasonably price – I think it was Grey’s Auctions. Worth keeping an eye out for them, they might filter down to ebay as well?

I thought you were The Bread Queen and would have no need for more bread books :) How do they make the stock taste chickeny without using chicken? Intriguing. Must see if there’s anything like this over here as I could use it for soup making in the Barley Barn kitchen when we have vegetarians. Hmmm, not sure if that would be appropriate to ask vegetarians to eat something that tastes of chicken.

Vale the trombies. They have been the source of much amusement but I guess I’ll need to wait until next year. Good to see that last one being put to good use. I make a quick brittle in the oven using only caster sugar but am not good enough on the saucepan. That one looks delish! xxx

In my kitchen I have the same bottle of Dom Perignon :) my darling brother gave it to hubby and I when he visited recently, saving it to drink on a special occasion. Love the Massel stock, have been using them for years. Love peeking in your kitchen.

I can’t believe you had a hailstorm last week. My goodness you could come to New England and feel right at home. If you ever visit us here I’ll be sure to order one up for you my friend.
I really love that set of cheese knife set – it’s very elegant and the bee is a really nice detail.
Believe it or not, I’ve poked my head up from the frustrating computer (you’ll see what I mean) and actually put together a new blog. It’s been a while and hopefully I’ll be getting back on to blogging that doesn’t involved too much computer technology!

What a pretty bottle of Dom Celia. I too recently picked up that Larousse bread book. It is filled with pages and pages of easy to follow recipes, and I love the step-by-step photos. That’s what I need! I’m sure you could pen your own book, what your wealth of bread making knowledge and experience. ‘Slash with panache’ has a great ring to it for a title! Jane, I’ve been reading some really interesting stuff about baguettes. Apparently the traditional way to make them was with a sourdough starter and a tiny bit of bakers yeast to reduce the acidity and low protein flour. Still trying to figure out how to make that work into the finished baguette I’m after!

wonderful gifts and lovely food. that rolling pin looks so cheerful and your bread always inspires me. Today I saw a brownie baked with praline crumbs sprinkled on top of it – not that Pete’s praline looks like it needs to be used up in that way but I did love the sound of those brownies.

What a lovely gift of Champagne – lucky you! 2004 was a good vintage in the Champagne region and will last for an additional 5-10yrs. It was only released in 2013 and I tasted it last year – still young and tightly wound and needing time to develop in the bottle. (But I must say, young as it is, it was really rather lovely – so all is not lost if you simply cannot wait! 😊)
Thanks for the advice, I’ll drink the 1998 I have under the house first then! Also have some very nice 2000 Comtes Taittinger and 2000 Pol Roger Winston Churchill to get through! :)

The Comtes is a new discovery for us, but it was absolutely sublime! My big collectible is actually vintage Portuguese port – I’ve got a bit of it under the house! :)

Celia, I’ve always dreamed of sipping Dom Perignon… ahhhh… and you SO deserve it after what you’ve been through lately!) Love your new knife set (what thoughtful neighbors!) and Pete’s “magic pralines,” too. Pralines are extremely popular here in the South (U.S.) and I’m swooning over his version. Kim, Pete’s pralines are always dark but not burnt – we love them! He has the patience to take them right to the edge without letting them turn bitter, and he judges purely by colour (obviously you can’t taste scorching hot praline! :))

ooh I am so jelly of that Dom Perignon Celia! Love the chestnuts; love the Laguiole. I have been using the Massel stock cubes for ages; didn’t know it was Australian – even better!

I love massel stocks (although my husband doesn’t know they’re vegan so he loves them too!). That praline and the bread have me wanting to eat them, or maybe lick the screen a little…
Sorry to hear about your garden, but the trombie looks lovely and healthy. We are considering chickens too, so I must search through your blog for some more research. I don’t think our yard is as big as yours, and we have dogs but I’m hoping to make it work. Hope you toast something marvellous with the bubbles!

I know the heartbreak of having your garden shredded by a hailstorm, so I totally feel your pain. Glad you managed one last trombie for the season.
I covet your knives. I have seen them appearing n some delis around here of late and have been very restrained and not bought any (yet). What is your opinion of the bread book? I’m always up for adding to my collection :)

Tania, the bread book is ok, I bought it mainly for the baguette recipe (which was ok) and the many photos on shaping. But all the recipes use plain flour, and I find plain flour doughs very dense and stodgy to work with.

Man, I definitely need some of that magic praline! Looks so good. Love that cheese knife set, very fancy. We just use regular kitchen knives, not very classy at all!

A wonderful looking month as usual Celia! Those Massel stock powders are great to have in the pantry, and unlike a lot of liquid stocks, they’re also gluten free. I love the cheese knife set too, and I have also been enjoying chestnuts this month – thanks for the peeling tutorial :)
