We made a batch of experimental Easter chocolates this year, using Callebaut white and a blend of Callebaut 811 (54%) and 70% dark.
The white chocolate was tempered first, drizzled into the moulds, then allowed to set up in the fridge. The tempered dark chocolate was then ladled over the white. We made two large eggs – I particularly love how the white and dark mingled in the bottom one to form a lighter shade of brown…
Two-toned lollipops were made by highlighting the design features in white chocolate first, using a small paintbrush…
The bows on these eggs took several coats of white chocolate…
And with all the leftover bits and pieces…

Karen, thank you so much! That means a lot to me – sometimes I look at how we make chocolate, with our heat mat and microwave and $2 moulds, and laugh at how basic it all is, compared to the tempering machines and coolrooms that the chocolate shops use.. :)

I love the look of that cake – waiting to see a slice….. I have made some choc chip muffins today with three colours of choc chips and we covered them with squirty cream – small tall nephew has already eaten two Easter eggs and is now playing Angry Birds downstairs. I do love it that you share your fantastic chocolate work with us, it all looks very pretty :) xx

Thinking of the production line in your kitchen makes me smile- as a child, we used to work before Easter on all the corsages my mother made for the Florist business- and as a younger adult I was making bunny dinner rolls, hot cross buns and iced cut out sugar cookies for the Bake shop. Now I’m roasting onions and lamb for tomorrow’s meal and making a Pavlova for dessert. Life is easier- but I miss the production line. :)
Heidi, I’m glad you understand – in some ways I find the “production line” very comforting – I really enjoy the rhythm and the routine of each season. And even the failures are edible! :)

Norma, thank you! We ate the first one yesterday, it was delicious actually – the white chocolate sweetened the dark just a little bit. They’re a fairly big eggs, about 5″ tall…

You inspired me to make some chocolate lollypops this year..or rather get the ingredients and have the daughters make them..the only thing is, where do you get lollypop sticks from? I tried a couple of kitchen shops to no avail and ended up going with bamboo skewers which had the pointy end cut off.

I’m sorry to hear that, Glenda! It takes a bit of fiddling, and holding the chocolate at the right temp to work it can be tricky too. Hope you figure it out! :)

Hehehe…thankfully teenages can handle far more chocolate than toddlers can, so we don’t end up with anyone bouncing off the walls from chocolate overdose anymore.. :)
