Christmas Chocolates

As promised, a round-up of all our Christmas chocolates for 2012…

We’ve made two versions of the Twelve Days of Christmas, in both Callebaut dark and milk feuilletine. The first batch used moulds from Candyland Crafts…

…and the second were made using a Christmas tin that I’d originally bought for shortbread. It never seemed to work for cookies, but the designs were crisp and sharp in chocolate…

I made a large batch of chocolate truffles at the last minute – it was tricky to get the ganache to set in our Sydney heat…

For the kids, we have milk feuilletine golden tickets, commonly known as “Kit Kat chocolate” in our house…

Here are our platters, ready to be delivered to the neighbours…

    While these choccies look so good they would have been choccy puddles here in Adelaide yesterday with 44C temperature. Thankfully 20C cooler today. Seasons Greetings Celia to you and your family.

    Hi Celia. You have lucky neighbours!. I know you are probably fed up with all the Q’s about tempering. I need to understand it before attempting. Can i Use any good quality chocolate like lindt to use as a ‘seed” does it have to be very dark of very large in order to teach the chocolate particles what to do? Lara

    Gorgeous chocolate as usual, how large is the holiday wreath? The design in the mold is exquisite and your wreath unmolded so beautifully, it is a mystery to me how you can make such perfect chocolates.

    Such a wonderful neighbour you are Celia. You have got to be the most popular person in the street – or probably neighbourhood. Your chocolates look magnificent as always, so lovely and shiny. I made rosemary truffles for Christmas and tried really hard to temper the chocolate, but it wasn’t very successful – again!
