As I was sitting in Dredgey’s kitchen recently, I saw him go to the fridge on a couple of occasions and take something out. In a move that would make a card magician proud, he palmed the mysterious item in his hand, then furtively popped it into his mouth.
Curiosity finally got the better of me, and I had to ask.
“What are you eating, Dredgey?”
“Supermarket chocolate. I didn’t want you to see.”
Ah, bless him. The next day, I took over a slab of rocky road…
I’ve started adding Pailleté Feulletine (wafer flakes) to my milk chocolate rocky road to give it extra crunch. This batch was made with a 50/50 blend of Callebaut 811 (54% dark) and 823 (milk). To the tempered chocolate, I also added half a bag of marshmallows, a handful of slivered almonds, chopped glacé ginger and cranberries…
Our rocky roads are always a combination of whatever I can lay my hands on in the pantry, but this particular batch was very popular, so I thought it was worth recording!

Barb, yes the feuilletine wafers were just added into the tempered chocolate, and they give it a kind of “Kit Kat” like crunch. The wafers are like a very thin version of the waffle cones they sell icecream in. I’ve heard you can also use cornflakes, but I’ve never tried!
I love that crunch!! I bet you could layer them and make a kit kat bar! Maybe with a wafer cookie in the center.. oh, my gosh.. you’ve got me craving chocolate now:D

Is there anything better than Rocky Road! I think it would be great with glace ginger in it to give that heat and the cranberries to give a little bit of sour. What a lovely looking treat and so kind of you to make that for your friend so he can do away with the cheap nasty chocolate he’s been consuming xx
Charlie, Pete says it’s quite grown up because of the ginger (and cranberries too), and therefore the adults actually get a chance to eat it! :)

I have yet to make a chocolate rocky road because I have never tempered chocolate. That has been on my list forever, but even without trying I already know this combination will be an instant hit in my house
There was a simpler & cheaper version of this kind of treat which we used to make for school breaktime back in the sixties. It was based on a bag of broken biscuits. These could be bought for very little from the local biscuit factory. The glue which held it all together was melted choc. We dubbed it Chocolate Grot!

Ohhhh, I’m slumped and in need of chocolate. I used to have a badge with a funny little hippo on it with the words, “if wearer is found depressed, administer chocolate immediately!” Even my Patsy is slumped having had no attention for a fortnight. I’ve given her some gentle feeds last night and this morning. Do you think she will perk up again Celia?
