Milk Chocolate Rocky Road

June 18, 2013 by Celia @ Fig Jam and Lime Cordial

As I was sitting in Dredgey’s kitchen recently, I saw him go to the fridge on a couple of occasions and take something out. In a move that would make a card magician proud, he palmed the mysterious item in his hand, then furtively popped it into his mouth.

Curiosity finally got the better of me, and I had to ask.

“What are you eating, Dredgey?”

“Supermarket chocolate. I didn’t want you to see.”

Ah, bless him. The next day, I took over a slab of rocky road…

I’ve started adding Pailleté Feulletine (wafer flakes) to my milk chocolate rocky road to give it extra crunch. This batch was made with a 50/50 blend of Callebaut 811 (54% dark) and 823 (milk). To the tempered chocolate, I also added half a bag of marshmallows, a handful of slivered almonds, chopped glacé ginger and cranberries…

Our rocky roads are always a combination of whatever I can lay my hands on in the pantry, but this particular batch was very popular, so I thought it was worth recording!

mmmmmmmm i do love rocky road!

    • on June 19, 2013 at 1:36 pm Celia @ Fig Jam and Lime Cordial

Sandy, this particular one was very popular – sometimes they don’t turn out quite so well.. :)

  4. on June 18, 2013 at 10:07 am Lizzy (Good Things)

Oh now that’s not fair! I’ve just been to the gym and a swim… and you tempt me with this deliciousness! Love it!

    • on June 19, 2013 at 1:36 pm Celia @ Fig Jam and Lime Cordial

Yes, you deserve it after all that exercise! :)

  5. on June 18, 2013 at 10:18 am Vita

    Glace Ginger. Makes everything better.

    • on June 19, 2013 at 1:36 pm Celia @ Fig Jam and Lime Cordial

Vita, that’s so true! I’m about to go buy some more! :)

  6. on June 18, 2013 at 10:30 am Maureen | Orgasmic Chef

I’m still working on where the name Dredgey comes from :)

Your rocky road is 50 levels higher than what you can buy. Love it! So when are you going to have a chocolate class?

    • on June 19, 2013 at 1:37 pm Celia @ Fig Jam and Lime Cordial

Maureen, I had one on the weekend! :) There really isn’t much too it – maybe I should write a more indepth blog post on it.

      • on June 22, 2013 at 7:24 am no1ladykay

Yes Please, would love to read a post on chocolate tempering:-)

  7. on June 18, 2013 at 11:42 am heidiannie

    So sweet !
    You.
    The Rocky road milk chocolate/
And not wanting you to know he was eating store chocolate.
    Your chocolate looks really fantastic.

    • on June 19, 2013 at 1:40 pm Celia @ Fig Jam and Lime Cordial

Thanks Heidi! We really are so lucky to have such great neighbours! :)

  8. on June 18, 2013 at 11:46 am Rufus' Food and Spirits Guide

That’s some very gourmet looking rocky road. Looks rich and wonderful.

    • on June 19, 2013 at 1:40 pm Celia @ Fig Jam and Lime Cordial

Thanks Greg – Pete says the ginger makes it more “grown-up”. :)

  9. on June 18, 2013 at 12:09 pm Barbara Bamber | justasmidgen

So were the wafer flakes added in here? Are those easy to find? I’m thinking a batch of these would do wonders with all this rain!! xx

    • on June 19, 2013 at 1:41 pm Celia @ Fig Jam and Lime Cordial

Barb, yes the feuilletine wafers were just added into the tempered chocolate, and they give it a kind of “Kit Kat” like crunch. The wafers are like a very thin version of the waffle cones they sell icecream in. I’ve heard you can also use cornflakes, but I’ve never tried!

      • on June 20, 2013 at 1:43 am Barbara Bamber | justasmidgen

I love that crunch!! I bet you could layer them and make a kit kat bar! Maybe with a wafer cookie in the center.. oh, my gosh.. you’ve got me craving chocolate now:D

  10. on June 18, 2013 at 12:26 pm Africanaussie

    oh gosh that sounds awesome!

    • on June 19, 2013 at 1:42 pm Celia @ Fig Jam and Lime Cordial

      Thank you! :)

  11. on June 18, 2013 at 1:59 pm EllaDee

I swear where most people of your kindness have a heart of gold, your heart is solid chocolate :)

    • on June 19, 2013 at 1:42 pm Celia @ Fig Jam and Lime Cordial

Ah you’re sweet, thanks ED! :)

  12. on June 18, 2013 at 3:00 pm radhika25

Oooh! Cranberries and ginger and marshmallows AND almonds! That sounds so good! I left you a comment asking how to use feuilletine just this morning….and then I see this post :)

    • on June 19, 2013 at 1:44 pm Celia @ Fig Jam and Lime Cordial

Yes, I’m sorry I missed your earlier comment, have answered it now! I only ever use the feuilletine in chocolate!

      • on June 19, 2013 at 1:46 pm radhika25

Thank you. I’m enjoying your blog, reading all the archived posts!

        • on June 19, 2013 at 1:47 pm Celia @ Fig Jam and Lime Cordial

That’s very kind of you, thank you! :)

  13. on June 18, 2013 at 3:04 pm Jane @ Shady Baker

This looks seriously good Celia x

    • on June 19, 2013 at 1:45 pm Celia @ Fig Jam and Lime Cordial

Thanks Jane! Can’t remember if I sent you some of my feuilletine chocolate last time?

  14. on June 18, 2013 at 3:56 pm Danielle

I agree with the other commenters: the addition of ginger is genius!

    • on June 19, 2013 at 1:45 pm Celia @ Fig Jam and Lime Cordial

Thank you, but serendipitous rather than genius – whenever I make rocky road, I rummage through the pantry looking for things to throw in! :)

  15. on June 18, 2013 at 4:55 pm hotlyspiced

Is there anything better than Rocky Road! I think it would be great with glace ginger in it to give that heat and the cranberries to give a little bit of sour. What a lovely looking treat and so kind of you to make that for your friend so he can do away with the cheap nasty chocolate he’s been consuming xx

    • on June 19, 2013 at 1:46 pm Celia @ Fig Jam and Lime Cordial

Charlie, Pete says it’s quite grown up because of the ginger (and cranberries too), and therefore the adults actually get a chance to eat it! :)

  16. on June 18, 2013 at 4:57 pm theintolerantchef

So sweet actually, did you realize that you were so intimidating Celia? My husband loves Rocky Road with all the red lollies in it- yuck. I think your mix with the ginger sounds much nicer and more sophisticated indeed- yummo! Xox

    • on June 19, 2013 at 1:46 pm Celia @ Fig Jam and Lime Cordial

No, I really didn’t think I was intimidating Becca, I’ll have to try harder not to be! :) xx

  17. on June 18, 2013 at 4:58 pm Suelle

What a great combination of add-ins!

    • on June 19, 2013 at 1:47 pm Celia @ Fig Jam and Lime Cordial

Suelle, it has our joint favourite – ginger! :D

  18. on June 18, 2013 at 7:17 pm Jo Smith

Oh boy that looks good. I have to stop reading your posts after dinner. I tried making chocolate the other day with cacao butter and powder. Not great and I’m not sure I’ll try again!

    • on June 19, 2013 at 1:49 pm Celia @ Fig Jam and Lime Cordial

Jo, lots of folks are doing that lately, but I’m still not sure why! Much easier to start with good chocolate in the first place! :)

      • on June 19, 2013 at 7:11 pm Jo

Yeah, I think it was a one off although Andrew just asked me what it was and said he really liked it!

  19. on June 18, 2013 at 8:48 pm Kari @ bite-sized thoughts

That is a funny story and I bet in future he’ll be less furtive so you can make more of this!

    • on June 19, 2013 at 1:51 pm Celia @ Fig Jam and Lime Cordial

I’ll always happily make them chocolate! :)

  20. on June 19, 2013 at 1:35 am marilynscottwaters

That looks so amazing. I am whimpering. using chocolate flakes is genius. Maz.

    • on June 19, 2013 at 1:52 pm Celia @ Fig Jam and Lime Cordial

Not chocolate flakes love, wafer flakes! So they turn out a little Kit Kat-like! :)

      • on June 23, 2013 at 1:51 am marilynscottwaters

        Even better! Gimmie!

  21. on June 19, 2013 at 3:25 am ale

I´m just thinking of moving to Australia!! next door to your kitchen… I love chocolate and every time I open your blog here there is a mouthwatering block of chocolate… oh my God!!!
As I´m not able to make those amazing chocolates, I´m trying one of your recipes of an “easy chcocolate cake”…..we´ll see….?????!!!!

    • on June 19, 2013 at 1:52 pm Celia @ Fig Jam and Lime Cordial

Thanks Ale – we do make a lot of chocolate, but it does get shared around! :)

  22. on June 19, 2013 at 6:52 am ChgoJohn

You are a marvel, Celia. You bake bread like a pro and create sweets like a French chocolatier. This rocky road looks incredibly good, far better than anything available at the shops.

    • on June 19, 2013 at 1:53 pm Celia @ Fig Jam and Lime Cordial

John, that is very kind of you – I think I cheat a bit though, as there’s heaps of things I’m rubbish at. I just don’t blog about them. :)

      • on June 19, 2013 at 2:01 pm ChgoJohn

        You’re a wise woman, too. :)

  23. on June 19, 2013 at 11:27 am cecilia

I wish i could make chocolate like you, but then I would have to eat it… c

    • on June 19, 2013 at 1:53 pm Celia @ Fig Jam and Lime Cordial

I thought you didn’t eat chocolate! If I’d known otherwise, I’d have sent you some! :)

  24. on June 19, 2013 at 12:47 pm Lorraine @ Not Quite Nigella

Ha poor guy! He had to hide it in his own home? :)

    • on June 19, 2013 at 1:54 pm Celia @ Fig Jam and Lime Cordial

No, no, he didn’t have to hide it in his home. He just felt like he had to hide it from me. ;-)

  25. on June 19, 2013 at 2:08 pm cityhippyfarmgirl

Deadly Celia. Absolutely deadly. Rocky Road has always held a soft spot in my heart :-)

In other news, it looks like my little girl has been passed on the ‘chocolate gene’…Mr Chocolate couldn’t be prouder.

  26. on June 19, 2013 at 2:09 pm Tandy

I haven’t made rocky road for ages!

  27. on June 19, 2013 at 8:33 pm Misky

Rocky Road was my dad’s favourite. He used to make it also. You’ve given me some lovely memories of him today, Celia. Thanks. :)

  28. on June 20, 2013 at 1:51 am Sawsan@ Chef in disguise

Hello Celia, I came here through Sally’s blog
I have yet to make a chocolate rocky road because I have never tempered chocolate. That has been on my list forever, but even without trying I already know this combination will be an instant hit in my house

  29. on June 20, 2013 at 4:39 am Peter Bryenton

There was a simpler & cheaper version of this kind of treat which we used to make for school breaktime back in the sixties. It was based on a bag of broken biscuits. These could be bought for very little from the local biscuit factory. The glue which held it all together was melted choc. We dubbed it Chocolate Grot!

  30. on June 20, 2013 at 7:15 am cravesadventure

Love a chocolate treat like this, especially with dried cherries and nuts – YUM:) Have a Great Day!

  31. on June 20, 2013 at 11:00 am Jan

Ohhhh, I’m slumped and in need of chocolate. I used to have a badge with a funny little hippo on it with the words, “if wearer is found depressed, administer chocolate immediately!” Even my Patsy is slumped having had no attention for a fortnight. I’ve given her some gentle feeds last night and this morning. Do you think she will perk up again Celia?

  32. on June 25, 2013 at 3:45 am Sophie33

I only love rocky road made with milk chocolate. Your tasty treats look Amazing.
    Yummy!
