I popped into Southern Cross Supplies in Marrickville recently.
After an end of financial year stocktake, they were offering a few items for sale – on a palate outside the entrance sat deeply discounted masonite cake boards ($4 each for huge ones, and no, I didn’t buy any) and these paper baking pans. I’d never used them before, but at 50c each (20 for $10), I thought they might be worth a punt (and useful for gift giving, if nothing else).
The pans are made from sturdy corrugated paper with a thin cardboard base and I think they’re the King Arthur brand. They’re a convenient 8″ diameter in size and the internet tells me that I need to treat them as I would a regular metal baking pan – greasing as per usual and baking at the same specified temps.
I tried our tiger cake recipe in two of them (there was far too much batter for just one) and was really pleased with the results…
I think I might need to tweak the heat or baking time just a little, as the crust was a bit thicker than usual. The cake was tender and tasty nonetheless…
After baking the cakes, I remembered that I still hadn’t used the panettone cases that lovely Joanna sent me ages ago. Happily, a large batch of our sweet dough recipe fills up four of these beautifully…
I rolled the dough into logs and curled them up like snails, then popped them into the greased paper moulds. Baby M came over and took two of these home with her…
Finally, a treat for Red Roars who’s studying for his HSC trials – little gluten-free chocolate cakes. They’re baked in paper-lined muffin tins and topped with icing sugar…

Aw, that tiger cake looks delicious, Celia! I quite like baking in paper, but I have some cases that are just too pretty to use! : )
Liz, they really are so pretty, aren’t they? I’m just glad I got them at 50c each – if they had cost any more than that, I suspect I’d just look at them.. :)
You have so many more options down there in Sydney. I love those paper baking trays. They have them up here in the stores but only at full price and that’s too spendy for me. :)

All of your baking looks delicious Celia, love those paper bits! I am baking some wholewheat, chia and walnut biscuits…not my usual sort of cooking, almost too healthy! They are surprisingly good :)
Jane, try as I might, I don’t like chia! I’ve got a kilo to play with, so I have to keep trying! :)
They are a great thing to have celia especially for you because you bake like me….for the world. I had quite a lot of these around for years from the old days at Essential Ingredient but after moving a couple of times I got sick of them in the cupboard and sent them to the recycling. Oh well maybe Ill get some more………

your baking looks fabulous celia..i only really like to make cup cakes in brown paper cases but they aren’t available any more from the supermarkets..i even contacted the company who used to supply them to the larger supermarkets and they said they’ve discontinued them..i have seen them on line though so i must follow up and get some..not having them has put me off making cup cakes lately and i miss making them..x

I think baking in paper cases is ideal for gift-giving, but apart from muffins and cup-cakes, the price of a case usually adds quite a lot to the cost. You got a great bargain there! The tiger cakes look good too!

At 3C outside I am baking myself in front of Brunhilda but no doubt there will be some weekend baking going on. I baked a deep dish pizza that I found the recipe for online last night for Stevie-boys tea and he loved it. Those paper cake “tins” would be lovely for gifting wouldn’t they? Just cool the cake, ice it in the “tin” and Bob’s your uncle (or your ex-husband if you are me ;) ).

Oh that tiger cake looks good. I baked steamed puddings yesterday as a practice for Christmas in July next week. A bit dry and I think I’ll do mini sticky dates instead. I also baked a salami and feta filled focaccia and poached a chicken using your recipes and thought of you! Your blog is such a treasure.

Yum, and the paper cases look wonderful, you always go that extra mile, like bought cakes but of course taste so much better. I tried a variation last weekend with ingredients hand to make apple and walnut bread for the G.O.’s smoko but back to good ol’ banana bread this week.

Great bargain indeed Celia! Maybe drop the temp a little? The paper wouldn’t insulate as well as tin, I always need to adjust if I’m cooking in glass too. I baked some yummy GF yoghurt rolls that I’ll be blogging soon, and littlej is making some macarons tomorrow with a friend- yummo! Xox

Anything to save on washing up! Your cakes look wonderful and varied as ever Celia. This afternoon I’m baking sponge cake to fill with raspberries and rose scented cream. Yes, I’m still in that phase :)
If I had access to fresh in-season raspberries, I’d never cook with anything else! :)

I buy the rectangular baking pans from Aldi……..look like the same brand…….just love them!

I’m so happy to see how you’ve used the paper! I have purchased paper bread pans and panettone papers, too, but I haven’t yet used them. For some reason I’ve held back from using them. Now I think I’m ready to go! :-)
Debra, I tend to save my pretty things for “good” as well, which is why getting so many of these was a treat. If I only had a few, I think I’d be looking at them rather than using them! :)
