In my kitchen…

…is a large bunch of lime basil, a new variety in our garden. I really like the slight acidic tang, but Pete isn’t convinced…

In my kitchen…

…are cakes of Linda’s loofah soap. She very kindly sent us some last Christmas, and we liked it so much that we traded her chocolate for some more. It’s lovely bartering with friends from afar! Each cake of soap has a slice of loofah embedded in it, which makes it perfect for post-gardening hand washes…

Linda also included a jar of her green mango pickle in the package – it’s very addictive, and I’ve been scoffing it on rice…

In my kitchen…

…is a bottle of Mrs Ball’s chutney. This South African treat was a gift from our neighbour Brett who, having grown up in Zimbabwe and South Africa, is quite addicted to the preserve. When I admired it recently, he opened his cupboard stash and presented me with a bottle…

In my kitchen…

…is a box of chocolate thins, made from Cacao Barry Tanzanie 75%, which we’re slowly eating our way through…

In my kitchen…

…is a massive sourdough bake from Saturday – over two dozen swirls and rosette rolls. Sixteen went to the neighbours, and the rest were eaten over the weekend…

In my kitchen…

…are new containers from Ikea. They’re perfect for storing Priscilla (our sourdough starter) in, as the little pop vent allows any gas build-up to escape…

In my kitchen today

…is my attempt at Heidi’s bears and bunnies in sourdough. I used a low hydration dough, and gave it a solid five minute knead to strengthen the dough, then attempted to follow Heidi’s instructions on creating a gluten coat. I was pretty pleased with the end result – the dough held its shape (roughly) and didn’t burst in the oven…

In case it’s of interest, here’s the formula I used:

  • 150g ripe sourdough starter (fed at a ratio of equal parts flour to water by volume)
  • 250g water
  • 500g bakers/bread flour
  • 9g fine sea salt

I must confess to retrofitting the eyes and nose of the bunny, as I’d been a little overzealous in poking the dried blueberries into the dough. (Small Girl has already come to pick him up!)

Here are the dough weights used for the rabbit:

  • Body 150g
  • Head 75g
  • Legs 50g x 2
  • Arms 25g x 2
  • Ears 33g x 2
  • Cheeks 3g x 2

Finally, not quite in my kitchen…

…but rather on our new outdoor table, are the pickings from last Saturday. It was raining heavily all day, but the vegetable crisper in the fridge was bare.  So we rugged up in wet weather gear and went into the garden – as I said to Pete, “if we don’t pick, we don’t eat”.

In the middle of the photo is one of our turnip-rooted Hamburg parsley – they haven’t been a huge success, but the small roots they’ve grown have been quite delicious…

In my kitchen…

…is a morning’s harvest from our garden – zucchini, cucumbers, long eggplants and an assortment of chillies…

In my kitchen…

…is a delicious tub of French hazelnut praline paste. I haven’t yet figured out what to do with it other than eat it with a spoon…

In my kitchen…

…because I’m so suggestible, is a garlic twist.  I bought one from Peters of Kensington after reading about it in Glenda’s September IMK post. It’s made of sturdy, dishwasher-proof plastic and minces garlic in just a few quick twists…

Best of all, I use it to make chicken rice dipping sauce! I mince (separately) garlic, chopped ginger and half a cayenne pepper in the twist, then combine them together in a bowl. The mix is seasoned with a pinch of salt, and then a little hot oil is poured over to bring all the flavours together…

In my kitchen…

…are glowing jars of Pete’s apricot jam. We bought a five kilo box of apricots at the markets for $10, ate half of them, and Pete made fifteen jars of jam from the rest…

In my kitchen…

…are three faux brioche loaves, made with the sweet dough recipe. They were delicious with our scrambled eggs and salmon

In my kitchen…

…are bamboo salad hands, a gift from Pete…

In my kitchen…

…is a potato ricer, bought to replace our old one which was falling apart. This Kuhn Rikon model disassembles completely to make washing up much easier…

In my kitchen…

…is a most wonderful gift from Rose!  She knitted me seven cotton dishcloths – one for each day of the week – and they work brilliantly! The open weave means they rinse out cleanly, and the strong Australian cotton (from Bendigo) comes out of our hot machine washes as good as new. Thanks again Rose, I love these…

Happy New Year!

How was your Christmas?

Ours was filled with family, friends and oodles of food!  Grab a cup of tea and pull up a chair, there’s lots to share with you in the kitchen this month…

In my kitchen…

…is a surprise treat from Jane at The Shady Baker – crushed olives produced by a friend of hers, and a couple of her large, homegrown garlic corms…

In my kitchen…

…are Turkish Apple teas from T2, a gift from my darling friend Becca, the InTolerant Chef

The powdered tea is similar to one I’ve tried before, but the chunky version is completely new to me, and makes a lovely, gentle brew…

In my kitchen…

…is a new lime-wood cutting board that I picked up at Chefs’ Warehouse.  There are two sizes available – this is the smaller one – and at 39cm x 59cm (15½” x 23″), it’s enormous. I took this photo before it was used, because I knew the light coloured timber would never be as pristine again…

The board has a wooden lip that wedges against the bench to prevent it from sliding around when in use. The only downside is that it just barely fits into the sink, which means the kitchen floor gets a soaking every time I wash it.  Just as well I bought the small one…

In my kitchen…

…is a giant tromboncino. We let one grow to see just how big they could get. Weighing in at two and a half kilos (five and a half pounds), it wasn’t as tasty as the smaller fruit, although it did make a lovely soup when combined with butternut pumpkin…

…are two loaves of black-salt encrusted sourdough, baked in a covered tin…

I love the way the salt embeds into the crust, like a mosaic…

…is a gift from Pete’s Aunt Liz – a tasting set of honeys…

In my kitchen…

…is a jarrah cutting board, made for me by Uncle Steve.

After reading Glenda’s December IMK post, I went on a quest for a wooden serving board.  My lovely brother-in-law heard me carrying on about it (to be honest, he could hardly not have heard me), and presented me with this one as a Christmas gift…

The long ends of the board are shaped, and it’s finished with olive oil.

Gregory, Ray and CC – my apologies, but Uncle Steve is now my all-time favourite brother-in-law…

In my kitchen…

…is a platter of chocolate treats for Karen’s 50th birthday – I tempered a combination of 250g each of Fairtrade Callebaut 811 (54%) and 823 (Milk) and moulded the blend into cane toads, a birthday card and fleur de lys squares. I then dipped Drambuie-soaked Persian figs in the leftovers…

…are treats for the school drama club…a large batch of Supernatural brownies

…and our ever reliable butterscotch bars

…is a container of organic cocoa, a gift that lovely Jo from Queensland surprised me with…

I used some of it to make two Tiger cakes

…one of which went with us to Uncle Steve’s place for lunch…

In my kitchen…

…is my latest succulent experiment. I’ve planted surplus cuttings in old tea light holders and found them a spot on the sunny kitchen windowsill…

I’m not sure how well they’ll manage without drainage holes, but they’ve certainly brightened up the kitchen…

In my kitchen…

…are heart shaped sourdough rolls, sliced for breakfast toast…

In my kitchen…

…is a huge tin of amazing Italian anchovy fillets. As I mentioned to Greg and Katherine recently, I think anchovies are a gift from God…

In my kitchen…

…with thanks to all my friends who emailed me frantically to tell me about the Peters of Kensington deal of the day, is a baby Emile Henry risotto pot. It’s much smaller than my other one, and cost just $34…

The first thing I cooked in it was a baked version of our chicken and chestnut rice

In my kitchen…

…are June’s Hungarian cabbage rolls. They’re soooo good and I was such a pest about them that she finally made a batch just for me…

Finally, in my kitchen…

…is a bottle of 1999 Clare Valley riesling. I took the arty Hipstamatic photo below after we’d had a glass or two.

Aged riesling is one of the great secret (I believe) of Australian wine. We buy riesling from the Clare or Eden Valleys in South Australia (they’re usually very reasonably priced) and stash them under the house for ten years or so, during which time they turn into luscious, golden treasures…

In my kitchen…

…is a mountain of chicken wings, freebies from our Saturday purchases at Haverick Meats. We were feeding our young friend Robert, who singlehandedly ate half the pile…

In my kitchen…

…are loaves of Iggy’s Breads, a gift from our friend Craig. I don’t buy bread, but if I was going to, it would be from Iggy’s, as these are some of the finest loaves I’ve ever tasted…

In my kitchen…

…is a magnificent five kilo piece of premium grassfed rump.  We now make all our mince at home, using an ancient attachment on the Kenwood…

We ended up with eight 500g packs of amazing mince, which were flat packed and vacuum sealed for freezer storage…

In my kitchen…

…is Italian candied orange rind, a new discovery from Southern Cross Supplies. I cut away the thick pith and dipped them in dark chocolate…

In my kitchen…

…are more tempering experiments, this time comparing the Amedei Chuao, Callebaut Sao Thome and Cacao Barry Tanzanie origin chocolates.  All three are magnificent, although I still prefer the Amedei…

Pete’s favourite is the Sao Thome, which he describes as “manly, a bit like what you imagine Old Gold should taste like”…

In my kitchen…

…is Pepe Saya buttermilk, a delicious byproduct of the butter making process. It’s completely different from commercial buttermilk, and still has small pats of butter floating in it…

We used a little of it in pancakes on the weekend…

Finally, in my kitchen…

…are today’s garden pickings, including broccoli, kohlrabi, rainbow chard, celery, leek, basil, coriander, mint and fresh garlic. They all went into a Thai green curry for dinner…
