Here’s a really easy recipe for icecream, providing you have an icecream maker.
Step 1: make microwave custard. Chill in the fridge, with a piece of clingfilm or parchment pressed against the surface to stop a skin forming. When cold, add half a cup of heavy cream and stir to combine.
Step 2: add flavourings (here we’ve added vanilla syrup)
Step 3: pour into icecream maker and freeze!
Note: this icecream freezes very solidly (at least in our stand alone freezer), so you might need to allow time for it to thaw a little before using it.
I can’t believe it. I just made vanilla ice cream. A friend gave me a whole lot of eggs and I thought it was a good opportunity to make ice cream. I have no ice cream maker so I googled making ice cream without a ice cream maker and it went straight to David Lebovitz. I have been stirring every half an hour. Great minds think alike. I am going to use the ice cream with some rhubarb I stewed today.

OK – trying this out with the juniorburgers for their Mum to enjoy when she returns from a short break this evening – fingers crossed.
Youngest L wants to stir – so he will have plenty of stirring today as we have no ice cream machine.

Success!!
We made 2 today. The JBs and I made this for the kids while I made a zabaglione for my missus and I.
There were only 2 problems:
1. I served the IC with balsamic blueberries and misread 2 tsp of vinegar as 2 tbs. Eldest L decided this could be remedied with extra sugar – which turned out to be an inspired suggestion.
2. Eldest L decided that the zabaglione was delicious and needed to be restrained from indulging. Actually, this first arose when she whipped the cream and amaretto and wanted to lick the spoon, the bowl and anything else that she could get her hands on.
