Cookie Power!

Pete wanted to call this post, “Cookie Mum Goes Mental!”.

Over the weekend, in a burst of baking enthusiasm, I made 112 cookies.

Most of them are in the photo above, along with the wrist guard which I tragically had to wear so that I didn’t hurt myself while scooping out the cold dough. I’m getting old…

I made three different sorts of cookies – our regular chocolate chip, a double chocolate, and a white chocolate with dark chunks.  They’ve all been packaged up, with most of them going into the freezer, where they’ll hibernate until we need them.  Cookies really do freeze very well, and I find it comforting to always have a stash on hand.

Due to time constraints, I mixed up all the batters on Saturday afternoon, but didn’t get a chance to bake them until Sunday morning.  When I went to scoop them out, I found that the dough had set hard, like firm ice cream (hence the wrist guard).

The cold dough baked into perfect round cookies – plump and fat, without any spreading.  I’ll definitely be making my cookie batter ahead of time from now on, and letting it chill in the fridge!

    Wow 112 cookies! Yes you definitely are the cookie queen! They look delicious! :D I love the sound of the white with dark chunks and the double choc ones :)

    I roll my dough out into logs wrapped in glad wrap (which I need to get them to roll if it is a very soft dough) and foil and then store it in the freezer. Really easy to cut slices of the frozen logs and bake. I never quite go as crazy as you making so much in one hit though I must say! I generally try and make a double batch everytime I make some, half for baking straight away and half for the freezer. That way I can look like a super organised person when I can whip up some freshly baked biscuits in ten minutes, with no mess. It fools a few people….really it does…

    Lorraine, believe it or not, the kids still prefer the regular choc chip ones!

    Spice Girl, I had a bit of a manic episode, and decided the kids and all their friends needed cookies for school. So far I’ve eaten just two, which I think is pretty good going! Oh, and btw, you are one of the most organised people I know – I’ve never known anyone to squeeze as much into a day as you do! :)

    Yum, yum and yum! I bet your kids were loving the “cookie mum goes mental” episode :) And very nice tip about freezing cooking batter ahead of time!

      Thanks Wink, although I didn’t freeze the dough overnight, only refrigerated it. You could probably freeze the dough as well (but I haven’t tried with these recipes). And yes, the kids are pretty happy! :)

    I love having cookies in the freezer. I would rather freeze the cookies than the dough in fact. When you scopped the cold dough did you just put it straight on tray and into oven or did you press it down at all?

    I wonder if you could scoop the freshly made dough onto trays and then refrigerate before baking to have the same effect but avoid wrist guard?

    Choclette, it does give me a warm and fuzzy feeling, knowing the freezer is full!

    Ozoz, you make me smile, what on earth gave you the idea that I was fit? :)

    Chris, I put the cold dough straight in the oven, no squishing at all. I like them to look like little golf balls when they go in, but the bottoms are usually flat. You could probably scoop then refrigerate, but that takes up more room in the fridge and, as you know, my fridges and freezers are stuffed to the gills! :)
