Sheep in a Blanket

During a recent freezer cleanout, I uncovered two packets of frozen giant marshmallows.

I turned one packet into marshmallow cookies – a favourite of Big Boy and his friends, although this time they were reasonably sized rather than ludicrous, as I had the foresight to cut the white pillows in half before encasing them in chocolate cookie dough.

Feeling lazy, I decided to try and make a slab with the remaining packet (wrapping dough around 25 marshmallow pieces had taken a looong time).

I made the same dough again, albeit with fewer added choc chips, and worked a thin layer over the bottom of a lined tray.  I topped this with whole marshmallows, and then tried to mould the remaining batter over the top.

The dough was very stiff, and in the end, it was just as fiddly as making the cookies (sigh) but the  result was this slightly mad bumpy terrain of marshmallow filled hills.  I had to stop Pete, who thought he could break them apart “like scones”.  (Edit: I think I’ll rename this dish Sheep in a Blanket.)

My mother always told me not to play with my food, but I don’t think she ever realised how much fun it could be!

    They look great Celia. How do you think I’d go using World Peace Cookies? They’re the favourite in our house at the moment (along with Dorie’s Vanilla Rum Cakes and your Choc slab cake) and I’ve got a fair amount of dough in the freezer. Cheers, Meaghan.

    Gill, it’s quite sweet, but the boys love it. I can only manage a little bit at a time.. :)

    Anna, I had two packets! Mad, I know, but the boys do love these cookies…

    Heidi, I’ve renamed the dish…

    Meaghan, I don’t think it would work, as the WPC are a very crumbly dough. This cookie dough is very stiff and fairly malleable, which you need to work around the marshmallows. Also, I don’t know how you could improve on Dorie’s WPCs…they’re pretty amazing! :)

    I like the new name – very apt! I think these would be too sweet for us….but I love the concept.
    I made your chocolate slab cake last night (as well as chocolate molten puddings – totally out of dark chocolate now and even had to break into the bars of special ‘eating’ chocolate that I had – and still two more weeks of ‘pantry clean out no shopping’…aaagggh!!!). The slab cake was fantastic. I am sure I made it before when you posted it and it was not as succesful as this time…hmm….wish I could remember why. A small slab has come into work with me today, just to keep my company…. :)

    now this is just crazy! i don’t even like marshmallows, not really, but this i’d eat in 2 seconds flat. that molten centre is incredibly inviting. yum!

    Brydie, my boys certainly love it, although I’m with the Spice Girl, it’s a bit sweet for me. Dana, it was crazy, I kept saying that as I was making it. It was like playing with Playdoh! Hehe..

    Haha, I read the name in my RSS feed and immediately thought of pigs in a blanket. Of course, when I clicked through, I realized it’s a gooey marshmallowey dessert and not cocktail weenies!

    Thanks Liza and Amanda! I’ve now had two phone calls today with people asking me why on earth I’d freeze marshmallows. I told them it was so I could make marshmallow cookies at a moment’s notice.. :)

    This sounds mouthwateringly scrumptious and sometimes a real sugar hit is just what is needed. Am intrigued at freezing marshmallows – I thought they kept forever or are they homemade ones?

      Choclette, the marshmallows weren’t in the freezer for storage. I’m sure they’d last fine for ages. They were only in there because they need to be frozen before being wrapped in cookie dough, or they’re too hard to handle and tend to explode when baked. I’d put a couple of packets in the freezer with the intention of making cookies at a later date, and forgotten all about them until last week.. :)

      Not sure if homemade ones would freeze – I’ve never made them, but am quite keen to try!
