During a recent freezer defrost, we uncovered a bag of frozen blueberries that needed to be used up in a hurry.
I turned them into Chocolate and Zucchini’s Blueberry Coffee Cake. I’ve been making this reliable recipe for years – and today I rather extravagantly included 500g of defrosted blueberries.
The recipe is here, and I made it exactly as written, although I used an 8″/20cm springform pan rather than the larger one specified, and therefore the cake needed a slightly longer cooking time. Happily, I was able to use Pete’s Greek yoghurt, eggs from our chooks, and our homemade vanilla extract!
The end result was a moist, comforting cake which will keep well for several days. I find it appealingly homely – I had a slice for afternoon tea, as I tried to fill in more of the Sunday crossword!

Lemon yoghurt cake is one of my favorites, but I never included blueberries because – if you can believe it – two of the three stepsons are anti-blueberries!
I sometimes add poppyseeds, though.
but, of course, since now it’s only the two of us and lab members, a blueberry version seems perfect… will be making it for sure

Shock gasp horror…I made a blueberry and sour cream cake on Sunday because I found blueberries in the freezer!
I also wanted to thank you for your hot cross bun recipe, I was finding it extremely difficult to pay $6 for 6 buns!!…particularly as they don’t last past a day in my house, so when it came time for me to attempt to make them I went straight to your blog, I figured you’d have tried and tested a few recipes and come up with the perfect one, and of course you did! I have macular degeneration and one of the very good foods to eat for wonderful anti-oxidants etc is blueberries (the advice doesn’t mention cake) but cake equals happy and that spreads to your eyes doesn’t it, therefore, cake plus blueberries = happy eyes.
Lovely! How lucky are you (and others!) to find blueberries lurking in the freezer! I do enjoy ‘homely’ cakes, especially those made with yoghurt ;)

Don’t know how I missed seeing your cake. It’s got a double dose of goodness with the blueberries and the yoghurt. I mean triple with the eggs. They contain lutein which is supposed to be very good for the eyes. Would some cream or custard on the side be allowed?
I made this yesterday and while it tasted fantastic I did have a problem with the blueberries sinking to the bottom. This meant that the finished result didn’t look at all like yours! Also my blue berries were not obvious on the top. They kind of merged with the brown sugar, perhaps I had the oven too high?

Claire, I’m sorry to hear that – not sure why it happened? Possibly the blueberries were too frozen – I always let them defrost a bit first? I bake mine at a slightly lower temp because I have a fan forced oven that always runs hot. Glad it tasted good though – Clotilde at Chocolate and Zucchini often makes it with a variety of different fillings, although the berry version is the only one I’ve ever tried…

I just asked my partner to buy some frozen blueberries to make muffins today but I think I might divert them into this cake – it looks almost cheesecake like in the first photo (I was looking for the coffee in the ingredients – duh).

That looks amazing! I have a bag of mixed berries in the freezer, which I need to use up as we have to move in a few weeks, so I will definitely make something like this so they don’t go to waste. It should work with mixed berries yeah?

I made this cake this afternoon with mixed berries. Hubby doesn’t like cakes because they’re “too dry and fluffy”, so he loved this :) My 2.5yr old said there were too many berries in it but the 1 yr old devoured her half a slice :) Might pour some custard over it for dessert. Thanks for the link!
I should add that it was a perfect opportunity to use eggs from our chickens, home-made vanilla extract (as per your inspiration) and easiyo-made yoghurt.
