Blueberry and Yoghurt Cake

April 6, 2011 by Celia @ Fig Jam and Lime Cordial

During a recent freezer defrost, we uncovered a bag of frozen blueberries that needed to be used up in a hurry.

I turned them into Chocolate and Zucchini’s Blueberry Coffee Cake.  I’ve been making this reliable recipe for years – and today I rather extravagantly included 500g of defrosted blueberries.

The recipe is here, and I made it exactly as written, although I used an  8″/20cm springform pan rather than the larger one specified, and therefore the cake needed a slightly longer cooking time.  Happily, I was able to use Pete’s Greek yoghurt, eggs from our chooks, and our homemade vanilla extract!

The end result was a moist, comforting cake which will keep well for several days.  I find it appealingly homely – I had a slice for afternoon tea, as I tried to fill in more of the Sunday crossword!

Oh my goodness!! I need to make this tonight!

Lemon yoghurt cake is one of my favorites, but I never included blueberries because – if you can believe it – two of the three stepsons are anti-blueberries!

    I sometimes add poppyseeds, though.

but, of course, since now it’s only the two of us and lab members, a blueberry version seems perfect… will be making it for sure

That looks beautiful, Celia! I love blueberry cakes. I could go for a piece right now, as I’m sitting here drinking my tea……

  4. on April 6, 2011 at 2:09 am Choclette

What a wonderful looking cake. The blueberries give it a lovely colour and it looks so moist and yummy. Is it helping with the crossword?

  5. on April 6, 2011 at 3:07 am Suelle

Wow – that’s certainly packed full of blueberries. I love the way the juice has marbled the cake batter.

  6. on April 6, 2011 at 6:13 am heidi

    That first picture is great!
It looks just like what I’m looking for in the morning.
    Any morning.
    Positively filthy with blueberries. Yum!

  7. on April 6, 2011 at 7:45 am David

You say it’s moist, it certainly looks moist and delicious. Please vacupak and send south of the border asap!

  8. on April 6, 2011 at 8:01 am Celia @ Fig Jam and Lime Cordial

Jenn, hope you enjoy it! I usually find C & Z’s recipes very reliable!

Sally, I’ve made this cake with all sorts of berries, and I believe the original recipe came with lots of different options for inclusions.

Abby, wish I could send you a piece! :)

Choc, not at all. The crossword is making me feel daft. We’ve only been able to get through about half of it! ;-)

Suelle, it’s so nice to hear from you, glad you’re back! Thank you, O Queen of marble cakes! :)

Heidi, yes, stupid number of blueberries, wanted to use up the old bag. The blueberries were starting to dry out a bit from freezer burn.

Davey, sure. It’s a nice recipe, you’d like it! :)

  9. on April 6, 2011 at 8:23 am Manuela

    Hi Celia!

That cake looks lovely. I have a bag of blueberries sitting in the freezer, so I will try it once I dig it out. (It’s somewhere close to the bottom, buried, I’m afraid.)

  10. on April 6, 2011 at 8:41 am Claire @ Claire K Creations

    It looks lovely.

I checked out your greek yoghurt recipe too and I can’t wait to give it a go. I’m off to find a jar that will fit in my thermos. Can I halve the recipe?

  11. on April 6, 2011 at 9:02 am InTolerantChef

I love the colour of the blueberries just slightly bleeding into the batter- very impressionalist.
How exciting to find buried treasure in the freezer, when it’s been there for a while, it’s as if it’s FREE!

  12. on April 6, 2011 at 9:18 am Joanna @ Zeb Bakes

Fruit and yoghurt cakes are a win win for me too! I love this cake of yours :)

  13. on April 6, 2011 at 11:39 am Joanne Jones

Blueberries are so very very good and this looks like an awesome way to eat them!

  14. on April 6, 2011 at 11:49 am Amanda

Lovely looking cake, Celia – and I hope it helps you to have a better day today!
    Remember – breathe!

    Looks like a winner!

  16. on April 6, 2011 at 1:11 pm Wendy

Shock gasp horror…I made a blueberry and sour cream cake on Sunday because I found blueberries in the freezer!
I also wanted to thank you for your hot cross bun recipe, I was finding it extremely difficult to pay $6 for 6 buns!!…particularly as they don’t last past a day in my house, so when it came time for me to attempt to make them I went straight to your blog, I figured you’d have tried and tested a few recipes and come up with the perfect one, and of course you did! They are so fantastic, I’ve got another batch proving upstairs as I type this…so thanks C xx

So happy you liked the recipe, W! I must make my giant hot cross bun again this year – I’m feeling too lazy to make lots of little ones.

I’ve blueberries squirreled away in every corner of the freezer for precisely recipes that come along like this one. Thanks Celia!
…and think of all those antioxidents in there.

  18. on April 6, 2011 at 4:41 pm Celia @ Fig Jam and Lime Cordial

Manuela, Brydie, Wendy, amazing how many of us had blueberries hidden in the freezer! :)

Claire, Pete’s not sure about halving the recipe, we’ve never tried to do that. He’s a bit concerned that the small thermos vice versa. If you do give it a go, please let us know how you go!

Becca, in our house, it’s what’s known as “sunk cost”..hahaha

Joanna and Joanne, thank you, I agree, it’s a great way to eat blueberries, especially lots of them in one go! :)

Amanda, thanks love, breathing a bit more today.. ;-)

SG, lovely cake, but possibly not for you, with all the wheat and dairy?

  19. on April 6, 2011 at 4:49 pm thecompletecookbook

Celia, what a decadent cake. Fabulous.
    :-) Mandy

  20. on April 6, 2011 at 5:17 pm Claire @ Claire K Creations

Celia, I was at Bi-lo and saw the easi-yo for $21 so I invested. It’s doing its thing on my kitchen bench right now. I can’t wait to try it!

  21. on April 6, 2011 at 6:16 pm Anna Johnston

Nothing like a good freezer defrost to find inspiration huh. Huge amount of blueberries in this one Celia, so it’ll keep for ages :)

  22. on April 6, 2011 at 7:33 pm Celia @ Fig Jam and Lime Cordial

    Mandy, thank you! :)

Claire, that’s very exciting! Hope it goes well! :)

Anna, it won’t last for ages here…it’s already mostly gone.. ;-)

I have macular degeneration and one of the very good foods to eat for wonderful anti-oxidants etc is blueberries (the advice doesn’t mention cake) but cake equals happy and that spreads to your eyes doesn’t it, therefore, cake plus blueberries = happy eyes.

  24. on April 6, 2011 at 9:48 pm Christine

Lovely! How lucky are you (and others!) to find blueberries lurking in the freezer! I do enjoy ‘homely’ cakes, especially those made with yoghurt ;)

  25. on April 7, 2011 at 12:59 am norma

I love going into my freezer and finding goodies…great cake.

  26. on April 7, 2011 at 8:22 am bagnidilucca

    Yum, I love blueberries

  27. on April 7, 2011 at 9:39 pm Celia @ Fig Jam and Lime Cordial

Jan, I’m sorry to hear about your eyes – the cake has eggs too, and apparently that’s very good for macular degeneration as well! :)

    Norma, Deb, thank you!

  28. on April 8, 2011 at 4:07 pm Mariana

Don’t know how I missed seeing your cake. It’s got a double dose of goodness with the blueberries and the yoghurt. I mean triple with the eggs. They contain lutein which is supposed to be very good for the eyes. Would some cream or custard on the side be allowed?

  29. on April 8, 2011 at 8:01 pm Claire

I made this yesterday and while it tasted fantastic I did have a problem with the blueberries sinking to the bottom. This meant that the finished result didn’t look at all like yours! Also my blue berries were not obvious on the top. They kind of merged with the brown sugar, perhaps I had the oven too high?
Tasted wonderful though so thanks for the recipe.

  30. on April 8, 2011 at 8:27 pm Lorraine @ Not Quite Nigella

That does look devilishly moist I have to say. How did your crossword go? :)

  31. on April 8, 2011 at 9:21 pm Celia @ Fig Jam and Lime Cordial

Mariana, it would be delicious with cream, but it’s so moist it doesn’t really need it! :)

Claire, I’m sorry to hear that – not sure why it happened? Possibly the blueberries were too frozen – I always let them defrost a bit first? I bake mine at a slightly lower temp because I have a fan forced oven that always runs hot. Glad it tasted good though – Clotilde at Chocolate and Zucchini often makes it with a variety of different fillings, although the berry version is the only one I’ve ever tried…

Lorraine, finally finished the crossword – took the whole family to do it. Bring on the next one on Sunday, I say! :)

  32. on April 9, 2011 at 1:44 pm Sarah - For the Love of Food

I just asked my partner to buy some frozen blueberries to make muffins today but I think I might divert them into this cake – it looks almost cheesecake like in the first photo (I was looking for the coffee in the ingredients – duh).

    • on April 10, 2011 at 11:50 am Celia @ Fig Jam and Lime Cordial

Hope you like it Sarah, the “coffee cake” name through me at first too! :)

  33. on April 12, 2011 at 3:50 pm Susan

That looks amazing! I have a bag of mixed berries in the freezer, which I need to use up as we have to move in a few weeks, so I will definitely make something like this so they don’t go to waste. It should work with mixed berries yeah?

    • on April 13, 2011 at 6:43 am Celia @ Fig Jam and Lime Cordial

Susan, absolutely! I’ve made it with mixed berries before! All the best with the house move!

  34. on April 13, 2011 at 6:52 pm Pam

I made this cake this afternoon with mixed berries. Hubby doesn’t like cakes because they’re “too dry and fluffy”, so he loved this :) My 2.5yr old said there were too many berries in it but the 1 yr old devoured her half a slice :) Might pour some custard over it for dessert. Thanks for the link!

  35. on April 13, 2011 at 7:22 pm Pam

I should add that it was a perfect opportunity to use eggs from our chickens, home-made vanilla extract (as per your inspiration) and easiyo-made yoghurt.

  36. on April 13, 2011 at 8:14 pm Celia @ Fig Jam and Lime Cordial

Pam, glad your husband and little one enjoyed it! Isn’t it just so satisfying when so many of the ingredients are homemade or homegrown? :)

  37. on April 13, 2011 at 10:21 pm The Richest Girl in Bondi

I’ve got a stack of frozen berries in the freezer right now, some yoghurt in the fridge, and this cake looks amazing. Could be a match made in my little kitchen heaven!

  38. on April 14, 2011 at 1:15 pm Celia @ Fig Jam and Lime Cordial

Bondi Girl, thanks for stopping by! Gorgeous part of the world you live in! :)
