Seed-Topped Bagels

May 9, 2014 by Celia @ Fig Jam and Lime Cordial

We adore sourdough bagels, but the yeasted ones are quick and easy – I can start in the morning and have a batch ready by lunchtime.

As we’d run out of sesame seeds, I raided Pete’s muesli supplies for other toppings. I made a double batch of our bagel dough following these instructions and using these quantities:

  • 1.2kg bakers/bread flour
  • 21g fine sea salt
  • 20g dried yeast
  • 750ml water
  • 50g malt extract

After boiling the bagels, I brushed them with egg wash and carefully dipped them into a plate of pumpkin and sunflower seeds (be careful not to deflate the bagel)…

The bagels were placed on a parchment lined tray, then poppy seeds and a little crushed flake salt were sprinkled over the top…

They baked to golden in just 20 minutes in a 200C fan-forced oven…

These were so delicious that we ate them without any filling. The seed topping is quite fragile though – handle with care, or you’ll end up with a denuded bagel. We’ll definitely be making them again!

Thanks Mandy! Hope you’re enjoying the weekend as well! xx

The bagels look beautiful and yummy! The topping would be a hit with my family. They love pumpkin and sunflower seeds.
    Enjoy your day!

    • on May 11, 2014 at 6:54 am Celia @ Fig Jam and Lime Cordial

Manuela, the seeds were a huge hit with Pete and I, but Small Man preferred his poppy seed ones. Hope you’re enjoying the weekend – is it Mother’s Day over there as well?

      • on May 11, 2014 at 7:17 am Manuela

Yes it is! Happy Mother’s Day!

        • on May 11, 2014 at 7:55 am Celia @ Fig Jam and Lime Cordial

          And to you! :)

Those look perfect for second breakfasts! And snacks. And lunch.
They just look perfect. Thanks- I’ll be making them

    • on May 11, 2014 at 6:55 am Celia @ Fig Jam and Lime Cordial

Thanks Heidi! They’re great fun to make! The only tricky thing for us was finding malt syrup, but the original recipe used brown sugar, so it would probably work just as well.

I love bagels but these are outstanding bagels!

    • on May 11, 2014 at 6:56 am Celia @ Fig Jam and Lime Cordial

Thanks Maureen! Bagels never seem to last long here either!

  6. on May 9, 2014 at 2:18 am frugalfeeding

Beautiful – those look exceptional! Big fan of seeds and plenty of them too!

    • on May 11, 2014 at 6:56 am Celia @ Fig Jam and Lime Cordial

Cheers Nick, they were great fun to make! Pete’s been asking for another batch already! :)

  7. on May 9, 2014 at 3:32 am sallybr

Show-stopping bagels, Celia! Professional looking, worth of a bakery!

    (no, I am not surprised!)

    • on May 11, 2014 at 6:56 am Celia @ Fig Jam and Lime Cordial

You’re very kind Sally, thank you! xxx

  8. on May 9, 2014 at 4:51 am narf77

They look amazing. I must admit I have never tried making bagels before as they look so complicated with all of those steps (where something could go wrong). Love the look of these. The seeds make them look particularly wholesome and delicious. Just checked out your other bagel post and you make it look so easy!

    • on May 11, 2014 at 6:57 am Celia @ Fig Jam and Lime Cordial

Fran, they’re time consuming, but not difficult really. Worth the work too, as they’re always so popular, and they freeze well too!

      • on May 11, 2014 at 11:04 am narf77

That’s the one thing that I am rich in Celia…time :) Part of the glories of being a penniless student hippy is all of that delicious time that I have to fill. Most of it tends to be in the garden or studying or cooking and I can spend a day baking bagels if I want to. I consider myself a very lucky girl :)

Bagels are one of the foods I miss the most – these look and sound so amazing!

    • on May 11, 2014 at 6:58 am Celia @ Fig Jam and Lime Cordial

I’m sorry your can’t eat them! Do they make gluten-free bagels? Some of the latest gluten-free breads have been amazing…

      • on May 11, 2014 at 8:22 am Laura @ the gluten-free treadmill

I’m sure they do – but maybe I should try some experimenting too (you’ve inspired me)!

  10. on May 9, 2014 at 7:09 am ardysez

    They look amazing!

    • on May 11, 2014 at 6:58 am Celia @ Fig Jam and Lime Cordial

      Thanks Ardys! :)

  11. on May 9, 2014 at 7:13 am custardorcream

Great minds think a like. I have just posted today on my blog about Beigels (or bagels as the rest of the world call them). Ps yours look great

    • on May 11, 2014 at 6:58 am Celia @ Fig Jam and Lime Cordial

It must have been something in the air – we all felt compelled to bake bagels! :)

  12. on May 9, 2014 at 7:46 am andreamynard

In awe of your bagel making Celia, still haven’t got round to it but very keen to have a go. And the seed mix looks great – healthy and delicious.

    • on May 11, 2014 at 6:59 am Celia @ Fig Jam and Lime Cordial

Andrea, I reckon Ruby might enjoy bagel making – lots of shaping balls into rings and sprinkling of seeds.. :)

  13. on May 9, 2014 at 8:18 am Wendy Paulucci

Hey C I have a tip for you…shock gasp horror! Try soaking the seeds in water for 15-20 mins, I’ve tried this with Nigella and/or Sesame seeds on my flat bread (was sick of having more seeds on the bench/board than on my flat bread) and it worked for me…they stick like glue! Your bagels look amazing! LoveWxx

    • on May 11, 2014 at 6:59 am Celia @ Fig Jam and Lime Cordial

Oooh, thanks Wendy, I’ll give it a go! I really did end up with a bench full of seeds!

  14. on May 9, 2014 at 8:36 am winesunder15dollars

These look delicious! Do you think it might go well with lox and/or cream cheese?

    • on May 11, 2014 at 7:00 am Celia @ Fig Jam and Lime Cordial

Thank you – the regular bagels are brilliant with fillings, but the topping on these is pretty fragile, so whilst they might taste good with lox and cheese, the topping might fall off in the process! :)

  15. on May 9, 2014 at 10:34 am Tania @ The Cook's Pyjamas

Thank you for this. I love sourdough bagels but they don’t get made often due to the time factor. It makes me glad to know that you make yeasted as well. I feel like I have been given permission now to do likewise :)

    • on May 11, 2014 at 7:01 am Celia @ Fig Jam and Lime Cordial

Sourdough bagels do take a while, don’t they? The yeasted are much easier! :D

  16. on May 9, 2014 at 11:35 am Liz Posmyk of Bizzy Lizzy's Good Things

Oh Celia, how delicious! Peter would LOVE these!

    • on May 11, 2014 at 7:01 am Celia @ Fig Jam and Lime Cordial

They’re great fun to make, Lizzy! :)

  17. on May 9, 2014 at 11:42 am Bronwyn

They look fabulous! I have made them before but will have make them again this weekend after reading your lovely clear tutorial. Last time, I put the boiled bagels on paper towel to dry ending up with little bits of paper stuck every where (obviously I wasn’t thinking). I won’t be making that mistake this time!

    • on May 11, 2014 at 7:03 am Celia @ Fig Jam and Lime Cordial

Bronwyn, hope you enjoy making them! And I’ve had the sticking issue as well, although in my case it was lint from a slightly fluffy tea towel! :)

  18. on May 9, 2014 at 12:12 pm hotlyspiced

You make beautiful-looking bagels. I love the look of all the seeds and how there’s just a touch of salt. And it’s incredible you can start these in the morning and have them out of the oven by lunchtime xx

    • on May 11, 2014 at 7:03 am Celia @ Fig Jam and Lime Cordial

Thanks love, they’re really quick to make compared to the sourdough ones. The boys love them! :)

I have been looking for a good bagel recipe for ever such a long time.. and here it is..but then I will eat them! Ah well.. c

        NOT!! he he.. c

  20. on May 9, 2014 at 5:25 pm My Kitchen Witch

How do you do it, Celia? You make everything look so easy and absolutely delicious. I love the seeded version very much and will now have to try my hand at bagel making.

    • on May 11, 2014 at 7:05 am Celia @ Fig Jam and Lime Cordial

Deb, you’re very kind, thank you. Bagel making is fun, especially if you have a spare pair of hands during the kettling process (so one of you can boil while the other one eggwashes and adds toppings).

  21. on May 9, 2014 at 5:26 pm Sandy

    One word – YUM!
Yep – def need to get me some ‘bakers flour’ ;-)

    • on May 11, 2014 at 7:06 am Celia @ Fig Jam and Lime Cordial

Sandy, it really does make a difference! :)

  22. on May 9, 2014 at 5:39 pm gourmetgetaway

I eat almost any type of bagel. But this one’s loaded! I’d love to try and make some for the whole family. Thanks, Celia!

Julie, they’re great fun to make! xx

  23. on May 9, 2014 at 6:56 pm Stefanie

Hi Celia, topping looks great and I like that you used what you could find very resourceful :) Love bagels!

    • on May 11, 2014 at 7:08 am Celia @ Fig Jam and Lime Cordial

Stefanie, I found the sesame seeds the next day at the back of the fridge. But I was pretty pleased with the outcome of not finding them the day before! :D

  24. on May 9, 2014 at 9:51 pm Melanie

I need to try bagels again soon. Yours look sooo good. You just don’t find them that loaded with topping at the store/cafe. Plus they’re so much cheaper to make/eat at home!

    • on May 11, 2014 at 7:09 am Celia @ Fig Jam and Lime Cordial

Mel, just massively cheaper, and better too! We’ve got to travel some distance to buy a decent bagel here.

  25. on May 9, 2014 at 10:52 pm My Kitchen Stories

I can guarantee that these bagels are delicious. I ate two without any filling. No butter no nothing. Yum

    • on May 11, 2014 at 7:09 am Celia @ Fig Jam and Lime Cordial

I’m so glad you got to try them, love, thanks for popping over! :)

  26. on May 9, 2014 at 11:25 pm theintolerantchef

Real boiled bagels are so perfect, but somehow you managed to make them even more perfect! Clever clogs you, Celia xox

    • on May 11, 2014 at 7:10 am Celia @ Fig Jam and Lime Cordial

  28. on May 10, 2014 at 1:25 pm Three Well Beings

Oh my goodness, Celia, these are incredible. I can’t wait to try them! I can tell they are delicious, and for me, irresistible. I have no doubt I will not be able to stop at one! How clever to raid the muesli for the toppings!

    • on May 11, 2014 at 7:10 am Celia @ Fig Jam and Lime Cordial

Thank you! Hope you enjoy them as much as we did! :)

      Thanks Tandy, me too! :)

  30. on May 11, 2014 at 10:12 am Lorraine @ Not Quite Nigella

I love sesame seed bagels for the extra flavour so I think I’d really love these with even more seeds! :)

  31. on May 14, 2014 at 4:50 am laurenlivingthesavorylife

I really need to try your bagel recipe! I miss them so much. Coming from the NE of the US I have had my fair share of bagels but feel like I have the capacity to eat SO many more! My favorite is a veggie sandwich on a works bagel with Vermont cheddar cheese. My second favorite is cinnamon raisin bagel with scallion cream cheese.

  32. on May 30, 2014 at 7:15 am dianeskitchentable

My goodness Celia, those look delicious. I’m not sure why but I never even thought to make bagels – I guess I always thought there was some special magic or tool or something I needed to do it. Thanks for this one.

  33. on September 14, 2014 at 3:16 am Susan Rappaport

They look so good. Are the seeds roasted or raw? I don’t know which to buy. Thanks!

    • on September 14, 2014 at 6:30 am Celia @ Fig Jam and Lime Cordial

Hi Susan, the seeds were raw. Thanks!
