We adore sourdough bagels, but the yeasted ones are quick and easy – I can start in the morning and have a batch ready by lunchtime.
As we’d run out of sesame seeds, I raided Pete’s muesli supplies for other toppings. I made a double batch of our bagel dough following these instructions and using these quantities:
- 1.2kg bakers/bread flour
- 21g fine sea salt
- 20g dried yeast
- 750ml water
- 50g malt extract
After boiling the bagels, I brushed them with egg wash and carefully dipped them into a plate of pumpkin and sunflower seeds (be careful not to deflate the bagel)…
The bagels were placed on a parchment lined tray, then poppy seeds and a little crushed flake salt were sprinkled over the top…
They baked to golden in just 20 minutes in a 200C fan-forced oven…
These were so delicious that we ate them without any filling. The seed topping is quite fragile though – handle with care, or you’ll end up with a denuded bagel. We’ll definitely be making them again!
This is my kind of bagel. Scrumptious.

Thanks Heidi! They’re great fun to make! The only tricky thing for us was finding malt syrup, but the original recipe used brown sugar, so it would probably work just as well.

They look amazing. I must admit I have never tried making bagels before as they look so complicated with all of those steps (where something could go wrong). Love the look of these. The seeds make them look particularly wholesome and delicious. Just checked out your other bagel post and you make it look so easy!
Fran, they’re time consuming, but not difficult really. Worth the work too, as they’re always so popular, and they freeze well too!
That’s the one thing that I am rich in Celia…time :) Part of the glories of being a penniless student hippy is all of that delicious time that I have to fill. Most of it tends to be in the garden or studying or cooking and I can spend a day baking bagels if I want to. I consider myself a very lucky girl :)

Hey C I have a tip for you…shock gasp horror! Try soaking the seeds in water for 15-20 mins, I’ve tried this with Nigella and/or Sesame seeds on my flat bread (was sick of having more seeds on the bench/board than on my flat bread) and it worked for me…they stick like glue! Your bagels look amazing! LoveWxx

Thank you – the regular bagels are brilliant with fillings, but the topping on these is pretty fragile, so whilst they might taste good with lox and cheese, the topping might fall off in the process! :)

They look fabulous! I have made them before but will have make them again this weekend after reading your lovely clear tutorial. Last time, I put the boiled bagels on paper towel to dry ending up with little bits of paper stuck every where (obviously I wasn’t thinking). I won’t be making that mistake this time!

I really need to try your bagel recipe! I miss them so much. Coming from the NE of the US I have had my fair share of bagels but feel like I have the capacity to eat SO many more! My favorite is a veggie sandwich on a works bagel with Vermont cheddar cheese. My second favorite is cinnamon raisin bagel with scallion cream cheese.
