Happy August everyone!

…is a ten kilogram bag of Callebaut Fair Trade 811 (54% dark). Yes folks, this is how I buy my chocolate. Please don’t judge me…

In my kitchen…

…are two blocks of Brancourts Farm Style Cottage Cheese, which I use to make Hungarian cheese cake (which Pete adores). The cake uses 500g, so I always pass the second block to my neighbour June…

The cheese is quite unique – like a cross between a firm cottage cheese and dry ricotta. June is adamant that nothing else will work in her recipe

In my kitchen…

…are hard yellow quinces! More to come soon on these…

In my kitchen…

…are Marcona almonds, a somewhat bizarre Costco discovery.  I had to ring my ever knowledgeable friend Tania to find out about these, and she advised that they were a delicacy and quite hard to find, so it seemed unusual to come across an entire stand of them at Costco for a very reasonable $22/kg…

The Marcona variety are a different cultivar to regular almonds, with a short round shape and a sweet, delicate texture. They’re extremely moreish…

In my kitchen…

…are small tetrapaks of the best coconut cream ever. Kara brand from Malaysia is as thick as clotted cream and a small 200ml carton is usually enough for an entire chicken curry…

In my kitchen…

…is Lebanese tahini. I am completely hooked on the stuff, and this is the brand that Ray at Harkola insists is the best. Lisa and Lina, I’d love to know what you think…

In my kitchen…

…are seven jars of pectin and six jars of lightly sweetened applesauce. We bought a 16kg box of large pink lady apples from Morris and Jody at Flemington Markets, and used the less than perfect ones to replenish our pectin supplies.

The whole apples were cut into chunks (peel on and core in), then boiled in filtered water until soft. It was all sieved through muslin that darling Heidi sent me (I’ve since found a local supply), and the leftover drained pulp was then passed through a food mill and sweetened (just a touch) to make applesauce. There are more detailed instructions here

…are balancing kiwis! We figured it was a good investment to add to a set of toys that we’ve played with regularly for eight years. We bought this pack online from Tarata in New Zealand…

…are free range eggs. Bought eggs. Sadly, our girls have finally stopped laying altogether. But..as we decided, they’ve earned their retirement…

…is a wedding gift from Aunt Liz and Uncle Peter. It’s an elegant Lalique crystal jug and it’s barely been out of the cupboard in the last twenty-five years – it just wasn’t something I was keen to put on the dinner table with small children around. I’m hoping to use it more frequently now…

…is a container full of coloured Sharpies. Pete can’t understand why we’d ever need anything other than black, but I’ve had great fun labeling freezer containers in different colours…

…are two new cookbooks…Jamie’s 15 Minute Meals and Louisa Shafia’s The New Persian Kitchen. The latter was bought on my friend Sally’s recommendation

…are new Mikasa bowls, picked up at Costco for just $2.50 each. They’ve brightened up my winter kitchen…

…there is always bread! These high hydration sourdough loaves were made with the Buratto flour that Tania gave me…

…are small perennial leeks for my mum, who uses both the white base and green leaves in her stir fries…

In my kitchen…

…is my favourite pasta. I always insist that we buy this instead of the bulk packs of penne (same brand and much cheaper), which drives Pete a bit mad. But how does one resist a pasta called “Eyes of the Wolf”?

In my kitchen…

…is toasted durum wheat pasta. We’ve never tried it before…

…but the colour was intriguing enough for us to pick up a packet!

In my kitchen…

…is a wonderful gift from my artist friend Gill Cox – bespoke coasters with prints of her paintings in them. They came in a surprise package all the way from the UK and we use them every single day. I love having Gill’s artworks on my dining room table…

In my kitchen…

…are roasted macadamia nuts. Linda blogged her spiced pecans recipe recently, which left me with a nut craving. I made a batch of these the same day…

In my kitchen…

…are Silver Palate toffee bars, made with the single egg yolk leftover from the macadamias. Our backyard eggs are so precious these days (we’re only getting about five a week now), that I couldn’t bear to waste it…

In my kitchen…

…a little narrowboat has sailed all the way across the seas to take up pride of place on my spice shelf. My dear friend Peter Bryenton is a UK-based photographer who takes the occasional shot of a narrowboat for Small Man. Peter popped this little wooden treasure into the mail for us…

In my kitchen…

…are baked treats. There’s leftover lardy cake bread and butter pudding

…and Hungarian cottage cheese and sour cream cake, made to my neighbour June’s recipe…

In my kitchen…

…is this year’s supply of plum brandy. We’ve made both regular and blood plum versions this time – the latter is shown on the right, and is far more viscous than our usual brews…

…are new bevvies – a Taylor’s Portuguese Late Bottled Vintage Port ($17) and a Sancerre ($15) from Costco (both very good and ridiculously cheap), and our latest find, Dirty Granny Cider from Matilda Bay brewers in Port Melbourne…

…are jars of this year’s apple butter, a welcome byproduct of our pectin making…

…is a packet of Kataifi pastry, bought on a whim. I’ve never used it before – does anyone have any tips, please?

…is a wonderful gift from Lorraine – dead sea salts from Jordan! Christine had these in her IMK post last month as well…

…is a jar of extra virgin coconut oil. I’m hoping it will work well in curries and stir fries. I’m also toying with the idea of vegan lardy rolls..

In my kitchen…

…are new Shin Bio heat packs. I use these for tempering chocolate, and they’re fabulous. The packs heat up and solidify with a click of a button, and then soften again when boiled. For the science geeks, here’s the chemistry behind it. We’ve reused ours dozens of times (maybe more).

I’ve had to discard two packs recently – we accidentally melted the plastic on one of them, and the other developed a leak – so it was time to replace them. They’re very good for sore muscles as well as chocolate making…

…are milk chocolate feuilletine “coins”, made with our Ma’moul moulds

In my kitchen…

…are four-chocolate butterscotch bars, baked for the school music department. Big Boy and Small Man are no longer in any school bands, but old habits die hard…

…are carrots from our garden. They don’t grow particularly well here, but we keep trying…

…are two savoury tromboncino slices. It wouldn’t be an IMK post without mention of the trombies – at least not while they’re still producing madly…

In my kitchen…

…are hot cross buns. This year, I made both yeasted and sourdough versions…

In my kitchen…

…is Mrs M’s old salt holder, filled with Maldon Sea Salt Flakes…

In my kitchen…

…is also my latest discovery – Olsson’s Pure Sea Salt.  Bread baking needs quite a lot of salt, and the brand I was using had been discontinued, so I was overjoyed when Pierre from Pepe Saya Butter put me onto Olsson’s. Not only is it made in Australia and completely additive-free, but it also costs under $2 a kilo!

For some reason, it’s not readily available in the large supermarkets, but it can be bought (somewhat surprisingly) in Chinese supermarkets and at Southern Cross Supplies

The medium grained cooking salt is perfect for our kitchen, but there are rock and fine table salts available as well…

In my kitchen…

…are yet more tromboncinos, zucchini, chillies and snake beans from our garden…

In my kitchen…

…are recent purchases from Lario International, where my friend Tania works.  The truffled anchovies (on the left) are quite nice and make a lovely addition to pizza.

Garum (on the right) is a fermented fish sauce which has been around for centuries – it was used as a condiment in Ancient Rome and Greece.  It’s incredibly potent and salty – not for the faint-hearted, nor the hypertensive.  Even I struggled with it (and I’m pretty good with fish guts), but Pete took one whiff and suggested we use it to chum the sea.  Having said all that, I was absolutely thrilled to have had the opportunity to try it…

In my kitchen…

…was a large sourdough bake from a couple of weeks ago – the rolls were made with a mix of bakers and Type 00 flour, and the loaves with Italian Buratto flour (post to follow)…

The following week, I made these rolls by shaping sourdough into balls and dipping them into a bowl of poppy seeds, before stamping them firmly. They were delicious, but there are now little black seeds in every nook and cranny of my kitchen…

In my kitchen…

…is a batch of gluten-free chestnut brownies, baked for my young friend Anni.  I met her at the bus stop to deliver them…

In my kitchen…

…is a gorgeous gift from Emilie at The Clever Carrot! I’ve been longing for a set of Anthropologie measuring spoons ever since reading about them on Smidge’s blog a couple of years ago, and let out a loud squeal of delight when I opened Em’s generous gift…

On Easter Sunday, I used the measuring spoons when I was making these tiger cakes

In my kitchen…

…is my latest breakfast pick-me-up – a chocolate shot made with 70% dark chocolate and boiling water, whizzed together. It keeps me going all morning!
