This is the kind of post that I’m always hesitant to write, because without fail, it’s going to make someone feel bad. So please let me preface my words by saying this – I’m simply sharing our views, I’m not trying to cause guilt, nor am I judging anyone. Everyone’s situation is different and we all make the decisions which best suit our lives and our families.

So…what happens when the dishwasher breaks?

At what point does it become “uneconomic” to fix it?

Our machines work hard for us – the Smeg oven has had almost commercial usage for the past eleven years, and the Miele dishwasher runs daily, and up to three or four times a day on weekends. And in that time, they’ve both performed brilliantly, but both are now getting older and starting to fail.

If this had happened a decade ago, we’d have replaced them by now. But over that time, our thinking has changed, and we’ve become acutely aware of the true cost of purchasing a new appliance. It’s no longer just an issue of dollars, but also the environmental cost involved – what happens to the old dishwasher? Is it simply dumped? Stripped for parts? What does it cost in terms of energy and raw materials to make a new dishwasher?

It’s a very hard thing to do, but so far we’ve put our money where our mouths are. The dishwasher has had its second major repair in three months (I won’t tell you the total cost or you’ll faint, but it’s about 60% of a new machine). The lovely technician who came out last week has replaced all the worn bits he could find, which will hopefully ensure trouble-free running for the next couple of years. It’s an expensive exercise, and we will eventually have to buy a new machine, but we’re determined to delay that process as long as we can.

Our oven has had the fan elements replaced three times (like light bulbs, they wear out with extended use) and the fan motor twice. Last year we also had to replace the door seal.

We treat our cars in the same way – our last car was eleven years old and had smoke coming out of the steering wheel before we finally traded it in. The toaster was used until it became a safety hazard, and the food processor was gerry-rigged to operate with a chopstick for an extra three years before the motor finally packed it in.

Apart from cars, most machinery these days seems to be designed to be disposable. For example, our microwave has a broken light which can’t be fixed – the bulb appears to be hardwired into the device. And certainly the cost of a service call actively encourages folks to discard and buy new rather than repair.

Energy and water efficiency are considerations – newer appliances are always better than older ones – but we’ve yet to be convinced that that justifies the environmental cost of building a new machine.

Having said all of this, it’s a hard line to toe. I’m an extrovert, I like new things. I desperately want a replacement vacuum sealer, but the $60 one I bought five years ago refuses to break, and I refuse to buy a new one until it does. It no longer automatically seals, but that’s not a good enough reason to replace it while it’s still working.

Going back to the large appliances – we’ll continue to buy the very best quality we can afford, and then try to use them for as long as we can. Wish us luck!

…were Halloween chocolates, ready for little Trick or Treaters…

In my kitchen…

…are a dozen bottles of Rochester Ginger. I buy a case every year from the lovely importer Rob and include the bottles in our Christmas gift hampers. Rob sold this year’s case to me at the discounted price of $195 (he matched the special they had on offer last December) which included free metro delivery to all capital cities (and 50% freight discount to everywhere else in Australia).

I’ve just spoken to him and he’s happy to extend the $195 price to any FJALC readers who would like to buy a case. Please just mention that you read about it here. Best of all, they’ll gift wrap the bottles if you ask!

In my kitchen…

…is a large ricotta slice, made to our original recipe, but substituting Pete’s Greek yoghurt for the sour cream. We think it’s even better this way! We spent a couple of months in 2009 experimenting with ricotta cake recipes and the end result was this simple and delicious slice

…is a new egg holder. Inspired by Moya’s post last month, I bought this little red ceramic tray to hold the eggs needed for baking – it stops them rolling all over the bench…

…are tissue paper flowers. Some people meditate, I make paper flowers and watch QI…

…are three incredibly old tins of cherries. They don’t have an expiry date, but I think the stamp on the bottom implies that they were packed in 2002. They were bought from the Jam Factory in Young – does anyone know if it’s still there?

In my kitchen…

…are sour cherry marshmallows – our latest flavour experiment. They’re my favourite, although Pete prefers the passionfruit ones

…are the last of the HSC care packages. In total, Roars and Alex got three each…

…is mulberry pie! Our neighbours’ tree is fruiting and they brought over a large bowl of berries…

…is blueberry crumb cake. It was a big hit with the boys…

…is my latest chilli fix. I take these chipotle peppers in adobo…

…and blitz them into a paste with the stick blender. I’ve been stirring this into everything…

…are barberries from Harkola. I’ve been on the lookout for these ever since we tried them at the Georgian restaurant

…are loads of backyard lemons and eggs…

In my kitchen…

…is a new decanter dryer from Peters of Kensington. It works very well and is far easier than trying to balance a decanter on its head like a giant mushroom…

In my kitchen…

…is a gift from our neighbour Liz – a Wonderbag slow cooker. This South African product is basically an insulated bag which keeps food warm, enabling it to continue cooking after it’s been removed from the heat source. We can’t wait to try it!

Wow, hasn’t our little In My Kitchen get-together grown!

It’s getting so big that it’s difficult to find the time to visit every post, and I’m getting emails from bloggers who feel they can’t join in because they don’t have time to “do the rounds”.

Some of you make a huge effort to comment on every single post each month (thank you!), but it’s not an option for most people, as there are just so many contributors now.

 …are two savoury squash slices…

I used just half of our monster squash (harvested over a month ago), six eggs, a large perennial leek, a little chipotle salsa and the last of our Bishops’ crown chillis. The recipe we use is a neighbourhood classic, and it’s infinitely adaptable. The original version is here.

…is a bottle of flavoured macadamia oil from Hawaii (thanks Lorraine!) and a bottle of Lingham’s Extra Hot chilli sauce. When Malaysians say “extra hot”, they’re not kidding…

In my kitchen…

…are three pigs’ tails, bought on a whim…

I braised them for three hours in a low oven, then picked off all the meat. Although not overly tender (or attractive), it was very flavoursome…

I used most of the meat in lasagnes – there was enough filling for two trays’ worth…

The last little bit of meat went into Chinese rice congee…

Copper Sugar Pot

“Celia, are you paying attention to what I’m saying?”

Christopher at Chefs’ Warehouse was using his serious voice.

“The pot is ONLY for sugar, and you have to clean it each time BEFORE you use it to remove any verdigris, which is poisonous..”

Ok, so that got my attention. I was ready to put the Mauviel unlined copper pot back on the shelf, but Pete was so excited that I couldn’t veto him. The last time he was this taken with a piece of cookware, we ended up with a waffle iron that has been in constant use for nearly thirty years.

That didn’t stop me wondering though – why on earth would anyone make a pot that was potentially dangerous? What advantage could it possibly offer? It breaks all the rules we have for buying cookware – it’s heavy (weighing in at over a kilo), it doesn’t go in the dishwasher, it’s not multipurpose and it’s going to look grotty within a month. Having said that, it is stunningly gorgeous at the moment.

We soon found out that it’s also absolutely amazing.

It seems to turn sugar and water into caramel all by itself. No stirring, no brushing down the sides, no fussing. It heats incredibly evenly, both on the base and up the sides, which helps to prevent crystals forming.

I was after a dark caramel for my hazelnut praline…

The caramel remained liquid while we stirred in the roasted chopped nuts and spread them out onto a greased sheet pan…

I chopped the praline into chunks…

…and added them to a bowl of tempered dark chocolate…

I love how the glistening golden praline matches the pot…

As usual, Pete was right – our new copper sugar pot is the bomb. Maybe we’ll try making spun sugar next!
